Variations and Additions
- Chocolate layer. You can use dark chocolate chips or milk chocolate chips in this recipe if you prefer.
- Brownie Layer. Substitute homemade Brownies in this recipe.
Step by Step Instructions
Step 1. Prepare the brownies based on the package instructions. Pour brownie batter into either an 8X8 or 9X9 baking pan. Line it with parchment paper overhanging the sides of the pan. You can also use cooking spray.
Step 2. While the brownies are baking in the oven, prepare the mint layer. Mix together the butter, powdered sugar, milk and peppermint extract until light and fluffy.
Step 3. Gently stir in the food coloring.
Step 4. Allow the brownies to cool once they are finished baking. They should have moist crumbs when a toothpick is inserted into the middle.
Step 5. Then spread the mint layer on top of the brownies.
Step 6. Next, make the chocolate layer. Melt the butter and chocolate chips in a microwave safe bowl. Heat in 20 second intervals, stirring after each interval, until fully melted and smooth.
Step 7. Next, pour the melted chocolate glaze evenly over the mint layer on the brownies.
Step 8. Top with chopped Andes mints. Allow to sit at room temperature for the chocolate to set. Then remove the fudgy brownie from pan and cut. Serve with Mint Chocolate Chip Ice Cream Cake .
Storage
Refrigerate the leftover brownies in a covered dish for up to 5-7 days.
Pro Tips
- Use a good brownie mix. I like to use Ghirardelli.
- Good quality chocolate chips. The chocolate layer will taste richer if you use a good chocolate. I like Guittard or Ghiradelli.
- Line the pan. I like to prepare the pan with parchment paper. It makes it so easy to pull out and cut into bars.
- Adjust the food coloring. You can add more or less green food coloring to the recipe. Feel free to adjust to your preference.
- Allow the brownies to cool completely. The pan of brownies should cool at room temperature before adding the mint layer.
FAQs
Wait until the chocolate has completely hardened. Then use a sharp knife to cut into bars. Wipe the knife after each cut to remove any residue. I also like to dip the knife in hot water for slices that look perfect!
This will help make each slice look great.
I suggest freezing the plain brownies. Then remove from freezer and allow to thaw. Make and add the mint and chocolate layers.
I suggest using peppermint extract in this recipe. Mint extract has a tendency to taste like mint toothpaste in baked goods.

- 2 drops Green Food Coloring

- 1/2 cup Unsalted Butter
- Crushed Andes Mints optional
Instructions
- Bake the brownies based on the package instructions in an 8X8 or 9X9 pan lined with parchment paper with the paper overhanging the sides of the pan.
- While the brownies are baking, prepare the mint layer. In a large bowl, mix together the butter, powdered sugar, milk and peppermint extract until light and fluffy. Gently stir in the food coloring.
- When the brownies are done baking, let them cool completely at room temperature. Then spread the mint layer on top of the brownies.
- Prepare the chocolate layer. Melt the butter and chocolate chips in a microwave safe bowl. Heat in 20 second intervals, stirring after each interval, until fully melted and smooth.
- Pour the melted chocolate evenly over the mint layer on the brownies and top with he mints if using.
- Let the brownies sit at room temperature until the chocolate is set.
