Pro Tips

  • Use a good brownie mix. I like to use Ghirardelli.
  • Good quality chocolate chips. The chocolate layer will taste richer if you use a good chocolate. I like Guittard or Ghiradelli.
  • Line the pan. I like to prepare the pan with parchment paper. It makes it so easy to pull out and cut into bars.
  • Adjust the food coloring. You can add more or less green food coloring to the recipe. Feel free to adjust to your preference.
  • Allow the brownies to cool completely. The pan of brownies should cool at room temperature before adding the mint layer.

FAQs

How do you cut the brownies into clean slices?

Wait until the chocolate has completely hardened. Then use a sharp knife to cut into bars. Wipe the knife after each cut to remove any residue. I also like to dip the knife in hot water for slices that look perfect!

This will help make each slice look great.

Can you freeze the brownies?

I suggest freezing the plain brownies. Then remove from freezer and allow to thaw. Make and add the mint and chocolate layers.

Can I use mint extract?

I suggest using peppermint extract in this recipe. Mint extract has a tendency to taste like mint toothpaste in baked goods.
