Orange Pudding

Orange Pudding is the perfect blend of citrus flavor and creamy pudding. It is simple to make with a few ingredients and better than anything store bought.

Ingredients

  • 1/2 cup Granulated Sugar
  • 2 Tablespoons Cornstarch
  • 1/8 tsp Salt
  • Zest of 1 Orange
  • 1 1/2 cups Orange Juice
  • 2 tbsp Butter
  • 2 Large Eggs

Instructions

  • Whisk together sugar, cornstarch, salt and orange zest in a medium saucepan.
  • Whisk in orange juice and bring to a boil over medium heat stirring constantly. Allow to cook for 2 minutes.
  • Place the eggs in a separate bowl and lightly beat them until foamy.  Then stir in 1 cup of the orange juice mixture from the sauce pan into the eggs and then slowly whisk the egg mixture back into the saucepan.
  • Bring to a boil and reduce the heat to low.  Cook and stir for 2 more minutes.
  • Remove from the heat and stir in the butter.
  • Transfer to serving dishes and chill (for approximately 2 hours).
  • Then the pudding is ready to serve and enjoy!

Notes

We love serving this pudding topped with fresh whipped cream. 
Refrigerate any leftovers in an airtight container for up to 4-7 days. 
It’s very important to gradually add the warm mixture to the eggs before adding them into the saucepan to avoid scrambling the eggs so make sure not to skip this step.
