Ingredients

  • 1 yellow cake mix
  • 2 eggs
  • 1/3 cup oil
  • 1 cup Peanut Butter
  • 1/3 cup granulated sugar

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper or lightly grease the baking sheet.
  • In a large mixing bowl, combine 1 box yellow cake mix, 2 eggs, 1/3 cup oil, and 1 cup peanut butter. Stir until a thick dough forms.
  • Place 1/3 cup granulated sugar in a small bowl.
  • Use a cookie scoop or tablespoon to portion the dough into balls. Roll each dough ball in the granulated sugar until completely coated.
  • Arrange the dough balls on the prepared baking sheet, leaving about 2 inches between each cookie.
  • Press the tines of a fork into the top of each cookie, then press again in the opposite direction to create a crisscross pattern.
  • Bake for 9 to 11 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
