Ingredients
For the Cookies:

all-purpose flour

baking powder

cream cheese softened to room temperature

salted butter softened

For the Glaze:
1 1/2
cup
powdered sugar
2-3
tablespoons
pineapple juice
from the can of crushed pineapple

Instructions
Whisk together the flour, baking powder and salt in a mixing bowl. Set aside.
Drain the crushed pineapple and reserve the juice for the cookies and glaze on the cookies.
In the bowl of a stand up mixer fitted with a paddle attachment, mix together the softened cream cheese and butter until well combined (2-3 minutes).
Scrape down the sides of the bowls and add in the sugar, beat together for another 2-3 minutes until combined.
Reduce the speed on the mixer to low and add in the eggs, vanilla extract and pineapple juice until well combined.
Slowly mix the dry ingredients into the wet ingredients on low speed until just combined and then carefully stir in the crushed pineapple.
Cover the dough and refrigerate for 30 minutes.
Preheat the oven to 350°F and line baking sheets with parchment paper.
Use a 2 tablespoon cookie dough scoop to scoop balls of dough and place them on the prepared baking sheets.
Bake cookies for 12-15 minutes until the bottom edges of the cookies start to brown slightly.
Let the cookies sit on the baking sheet for 5 minutes and then move them to a cooling rack to cool completely.
While the cookies are cooling, whisk together the glaze ingredients.
Top each cookie with the glaze and allow the glaze 30 minutes to set on top of the cookies.
Then the cookies are ready to serve and enjoy!
Notes
Store any leftover cookies in an airtight container for up to 1 week.
