Step By Step Instructions

Step 1. Use a large mixing bowl and combine the flour, baking powder and salt in a mixing bowl. Set aside for later.

Step 2. Next, drain the crushed pineapple and reserve the juice for the glaze on the cookies. Get out your electric mixer. In the bowl of a stand mixer with a paddle attachment, mix together the cream cheese and butter until combined.

Step 3. Make sure to scrape down the sides of the bowls with a spatula. Then add in the sugar and beat for another 2-3 minutes. Reduce the speed on the mixer to low and add in the eggs, vanilla extract and pineapple juice until combined.

Step 4. Gradually combine the dry ingredients into the wet ingredients on low speed. Then stir in the crushed pineapple into the mixture. Cover and refrigerate for 30 minutes. While the dough chills, preheat the oven to 350ยฐF and line baking sheets with parchment paper.

Step 5. Form the dough into balls using a 2-tablespoon cookie dough scoop. Place the cookies on the prepared cookie sheet.

Step 6. Finally, bake the cookies for 12-15 minutes in a preheated oven.

Step 7. Allow the cookies to cool on the baking sheet for 5 minutes and then move them to a wire rack to cool completely.

Step 8. While the cookies cool, make the glaze.

Step 9. Combine the powdered sugar and pineapple juice until smooth.

Pineapple Cookies
Ingredients
For the Cookies:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ยฝ teaspoon salt
- 4 ounces cream cheese softened to room temperature
- ยฝ cup salted butter softened
- 1 cup granulated sugar
- 1 large egg room temperature
- 1 teaspoon vanilla extract
- 1 Tablespoon Pineapple Juice
- 1/2 cup crushed pineapple drained
For the Glaze:
- 1 1/2 cup powdered sugar
- 2-3 tablespoons pineapple juice from the can of crushed pineapple
Instructions
- Whisk together the flour, baking powder and salt in a mixing bowl. Set aside.
- Drain the crushed pineapple and reserve the juice for the glaze on the cookies.
- In the bowl of a stand up mixer fitted with a paddle attachment, mix together the softened cream cheese and butter until well combined (2-3 minutes).
- Scrape down the sides of the bowls and add in the sugar, beat together for another 2-3 minutes until combined.
- Reduce the speed on the mixer to low and add in the eggs, vanilla extract and pineapple juice until well combined.
- Slowly mix the dry ingredients into the wet ingredients on low speed until just combined and then carefully stir in the crushed pineapple.
- Cover the dough and refrigerate for 30 minutes.
- Preheat the oven to 350ยฐF and line baking sheets with parchment paper.
- Add vanilla extract and egg; beat until combined. Use a rubber spatula to scrape the sides of the mixing bowl.
- Use a 2 tablespoon cookie dough scoop to scoop balls of dough and place them on the prepared baking sheets.
- Bake cookies for 12-15 minutes until the bottom edges of the cookies start to brown slightly.
- Let the cookies sit on the baking sheet for 5 minutes and then move them to a cooling rack to cool completely.
- While the cookies are cooling, whisk together the glaze ingredients.
- Top each cookie with the glaze and allow the glaze 30 minutes to set on top of the cookies.
