Ingredients

Cookies

  • All-purpose flour. It is best to spoon the flour when measuring to prevent packing too much into the cup.
  • Salt. Enhances the flavor of the other ingredients.
  • Cream Cheese. Softened at room temperature so it is easy to combine.
  • Salted Butter. Use real butter and allow it to soften first.
  • Large Egg. Room temperature for even baking.
  • Vanilla extract. Pure vanilla extract is best in this recipe.
  • Pineapple Juice. This gives the cookies amazing pineapple flavor.
  • Crushed pineapple. Make sure to drain it first. In this recipe, canned pineapple is better than fresh pineapple.

Glaze

  • Powdered sugar. Sift the powdered sugar before using.
  • Pineapple juice. You can use the juice from the can of crushed pineapple. 

Variations

  • Shredded Coconut. Add shredded coconut into the cookie batter.
  • Mini Chocolate Chips. Fold in mini chocolate chips into the batter.
  • Nuts. Add chopped walnuts or macadamia nuts.

Step By Step Instructions

Step 1. Use a large mixing bowl and combine the flour, baking powder and salt in a mixing bowl. Set aside for later.

Step 2. Next, drain the crushed pineapple and reserve the juice for the glaze on the cookies. Get out your electric mixer. In the bowl of a stand mixer with a paddle attachment, mix together the cream cheese and butter until combined.

Step 3. Make sure to scrape down the sides of the bowls with a spatula. Then add in the sugar and beat for another 2-3 minutes. Reduce the speed on the mixer to low and add in the eggs, vanilla extract and pineapple juice until combined.

Step 4. Gradually combine the dry ingredients into the wet ingredients on low speed. Then stir in the crushed pineapple into the mixture. Cover and refrigerate for 30 minutes.  While the dough chills, preheat the oven to 350ยฐF and line baking sheets with parchment paper.

Step 5. Form the dough into balls using a 2-tablespoon cookie dough scoop. Place the cookies on the prepared cookie sheet.

Step 6. Finally, bake the cookies for 12-15 minutes in a preheated oven.

Step 7. Allow the cookies to cool on the baking sheet for 5 minutes and then move them to a wire rack to cool completely.

Step 8. While the cookies cool, make the glaze.

Step 9. Combine the powdered sugar and pineapple juice until smooth.

Step 10. Add the pineapple glaze to each cookie. Allow the glaze to set for 30 minutes before serving the Pineapple Drop Cookies.

Storage

Store any leftover cookies in an airtight container up to 1 week. Separate the layers with parchment paper.

  • Cream the Cream Cheese, butter and sugar. It is important to cream these ingredients together until fluffy. This step helps to create a soft and fluffy cookie once baked.
  • Chill the dough. Don’t skip this step. It will help to prevent the cookies from spreading too much while baking.
  • Make sure the baking powder has not expired. You need this ingredient to help the cookies rise. It is important to ensure the baking powder has not expired.
  • Reduce the pineapple flavor. If you would like less tropical flavor, use milk instead of pineapple juice in the glaze.

Ingredients

For the Cookies:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ยฝ teaspoon salt
  • 4 ounces cream cheese softened to room temperature
  • ยฝ cup salted butter softened
  • 1 cup granulated sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1 Tablespoon Pineapple Juice
  • 1/2 cup crushed pineapple drained

For the Glaze:

  • 1 1/2 cup powdered sugar
  • 2-3 tablespoons pineapple juice from the can of crushed pineapple

Instructions

  • Add vanilla extract and egg; beat until combined. Use a rubber spatula to scrape the sides of the mixing bowl.
  • Use a 2 tablespoon cookie dough scoop to scoop balls of dough and place them on the prepared baking sheets.
  • Bake cookies for 12-15 minutes until the bottom edges of the cookies start to brown slightly.
  • Let the cookies sit on the baking sheet for 5 minutes and then move them to a cooling rack to cool completely.
  • While the cookies are cooling, whisk together the glaze ingredients.
  • Top each cookie with the glaze and allow the glaze 30 minutes to set on top of the cookies.
  • Then the cookies are ready to serve and enjoy!
