Rainbow Popsicle Recipe

Ingredients

  • 1 cup Strawberries frozen
  • 1/2 cup Mango frozen
  • 1 cup pineapple chunks frozen
  • 1/2 cup Sliced Kiwi peeled and frozen
  • 1 cup Blueberries frozen
  • 2 Tbsp Honey divided

Instructions

  • Blend each type of the frozen fruit with approximately 2 tsp of Honey.  Make sure to thoroughly clean out of the blender between each type of fruit to prevent the colors from mixing together.
  • Then using a spoon carefully add a layer of each fruit into the popsicles molds in this order: strawberries, mango, pineapple, kiwi and blueberries.  This will create a rainbow look.
  • Then insert in the popsicle sticks and freezer for at least 6 hours but overnight is preferred.
  • When you are ready to serve, run warm water on the outside of the molds to loosen the popsicles from the molds.
  • Then they are ready to enjoy!

Notes

*Keep the popsicles in the molds in the freeze until you are ready to enjoy them.  They will last for 2-3 months in the freezer.  
*You can use canned, fresh or frozen fruit.  If you use canned or fresh, we recommend freezing the fruit before using it to make these rainbow popsicles.  
*The colors will blend some when you’re adding them to the popsicle molds.  If you want perfect layers, you can freeze the popsicles for approximately 1 hour after adding each layer.
