This is one of our favorite easy recipes. The rainbow fruit popsicles have gorgeous layers of fruit mixture that taste amazing.

The layers make it look so pretty and the fruit is so flavorful. Everything comes together for a healthy treat perfect to beat the heat. Rainbow treats are so much fun and I also make Rainbow Cupcakes and Easy Rainbow Sugar Cookies.

Why This Recipe Works

It is so simple to make homemade popsicles with rainbow layers. The blender makes it easy to make the fruit mixture.

Everything goes into the molds layer by layer. Then freeze. It is that simple.

By blending the fruit separately, it creates layers that are absolutely stunning. The finished product will have a yellow layer, green layer, red layer and more.

Ingredients

Ingredients for Rainbow Popsicles - strawberries, mango, pineapple, kiwi, blueberries and honey.
  • Strawberries. Frozen is best.
  • Mango. Chunks that are frozen.
  • Pineapple chunks. These need to be frozen as well.  
  • Sliced Kiwi. Peel the fruit and freeze.
  • Blueberries. Frozen. 
  • Honey. This is the sweetener.

Variations

  • You can try other types of fruit to make these homemade fruit popsicles. More ideas include: Plums, Cantaloupe, Mango, Bananas, raspberries, peaches or anything you like.
  • Sneak in veggies. This recipe is easy to incorporate veggies into the layers without the kids noticing. The key to sneaking in veggies is to use similar colored ingredients.

    For example, puree spinach with the kiwi. No one will notice because they are both green and the taste blends in too.

How to Make Rainbow Popsicles

  • Step 1. Blend the frozen fruit. Separately blend each type of the pure fruit with a small amount of honey. We used approximately 2 tsp of Honey. Whisk into mixture until desired preference. Make sure to thoroughly clean out the blender between each type of fruit. This will prevent the colors from mixing together.

Step 2. Spoon the blended fruit into the molds. Use a spoon to carefully add a layer of each fruit into the popsicle’s molds. Start with strawberry.

Step 3. Then add the mango layer.

Step 4. Next, add pineapple. This will create a gorgeous rainbow look in each ice pop.   

Kiwi layer added into the mold.

Step 5. Then add the kiwi layer. Finally, add the blueberry layer. Freeze at least 6-8 hours.

Expert Tips

  • Fruit. Feel free to substitute canned or fresh fruit for the frozen fruit in this recipe. If you use canned or fresh, we recommend freezing the fruit before using it to make these rainbow popsicles.  
  • Layers. The colors will blend some when you’re adding them to the popsicle molds.  If you want perfect layers, you can freeze the popsicles for approximately 1 hour after adding each layer.  

    This will take more time but the layers are more defined. Just wait to pour the next layer until the previous one is frozen solid.
  • Popsicle Molds. It is fun to try new shapes and types of molds. Feel free to use what you have on hand.

Frequently Asked Questions

How to remove from the mold?

When you are ready to serve, run warm water on the outside of the molds to loosen the popsicles from the molds.

It only takes a few seconds so do not allow it to stay under the water too long. You do not want to melt the popsicles.

Don’t remove the mold under hot water. It is too easy to melt the popsicle. I recommend warm water only.
Then they are ready to enjoy!

Can you make in advance?

You can blend all of the fruit and place in the fridge. The next day make your popsicles and have one less step to do.

How to store?

Remove the popsicles from the molds and place inside a freezer bag or container. They will last up to 2 to 3 months in the freezer.

I don’t recommend leaving them in the molds because they are usually not air tight. Also, it is just more convenient removing them from the molds. Kids can grab one and enjoy their snack without having to remove from the mold every time.

  • 1 cup Strawberries frozen
  • 1/2 cup Mango frozen
  • 1 cup pineapple chunks frozen
  • 1/2 cup Sliced Kiwi peeled and frozen
  • 1 cup Blueberries frozen
  • 2 Tbsp Honey divided

Instructions

  • Blend each type of the frozen fruit with approximately 2 tsp of Honey.  Make sure to thoroughly clean out of the blender between each type of fruit to prevent the colors from mixing together.
  • Then using a spoon carefully add a layer of each fruit into the popsicles molds in this order: strawberries, mango, pineapple, kiwi and blueberries.  This will create a rainbow look.
  • Then insert in the popsicle sticks and freezer for at least 6 hours but overnight is preferred.
  • When you are ready to serve, run warm water on the outside of the molds to loosen the popsicles from the molds.
  • Then they are ready to enjoy!
