Red Velvet Mug Cake is the perfect single serving cake that is easy to make. This moist and fluffy cake is topped with a delicious cream cheese frosting.

Ingredients

For the Mug Cake:

  • 1/3 cup All Purpose Flour
  • 2 Tablespoons Granulated Sugar
  • 1 teaspoon unsweetened cocoa powder
  • 1/2 teaspoon Baking Powder
  • 1/4 cup Milk
  • 1 1/2 Tablespoon Vegetable Oil
  • 1/2 teaspoon Vanilla Extract
  • 3-4 Red Food Coloring

For the Frosting:

  • 1 Tablespoon Cream Cheese softened
  • 3 teaspoons Confectioners Sugar

Instructions

  • In a large microwave safe mug, stir together the dry ingredients for the mug cake.  Then add in the vegetable oil, vanilla extract and red food coloring.  Stir until the ingredients are combined and the cake is a deep red color.
  • Microwave for 90 seconds on full power until the cake has risen and is cooked through.
  • In a separate bowl, stir together the cream cheese and confectioners sugar.  Spread on top of the cooled mug cake and enjoy!

Notes

This mug cake is designed to eat while fresh as the leftovers do not keep well. 
I used a gel food coloring to get a vibrant color.  If you use a liquid food coloring, you may need to use more to get the correct color.
