My kids love red velvet cake, and this is the perfect serving for them. Everything is mixed together in the mug and cooked in the microwave. Making a cake in the mug is the perfect amount of cake instead of making an entire cake.

Ingredients

Ingredients needed - flour, sugar, cocoa powder, baking powder, milk, oil, vanilla, red food coloring, cream cheese, powdered sugar

Cake

  • All Purpose Flour. Make sure to measure the flour by spooning it into the measuring cup. I don’t suggest scooping it because you may pack too much flour into the cup.
  • Cocoa Powder. Use unsweetened cocoa powder.
  • Milk. You can use any type of milk in this recipe, but I prefer whole milk.
  • Vanilla Extract. Pure vanilla extract is best in this cake recipe.

Frosting

  • Cream Cheese. Softened at room temperature.
  • Confectioners Sugar. Sift the powdered sugar before using.

How to Make a Red Velvet Mug Cake

Step 1. Combine the ingredients in a large microwave safe mug. Stir together the dry ingredients for the mug cake. Then add in the wet ingredients.

Step 2. Stir until the batter ingredients are combined and the cake is a deep red color.

Step 3. Next, microwave for 90 seconds until the cake has risen and it’s cooked thoroughly.

Step 4. While the cake cools, make the frosting. In a separate bowl, stir together the cream cheese and powdered sugar.  Finally, spread on top of the cake once cool.

Expert Tips

  • Red Food Coloring – I used a gel food coloring to get a vibrant color.  If you use a liquid food coloring, you may need to use more to get the correct color. 
  • Overflowing Cake – If you cake overflows in the mug then you may be using to small of a mug. Make sure to use a mug that was at least 12.5 ounces. You can also use a small bowl.
  • Hard Cake – If you find that your cake is hard or rubbery then you probably have cooked the cake to long. In most microwaves 90 seconds of time cook this cake. You may need to reduce the time to 80 seconds.

You will know that your cake is done when the cake has risen in the mug. There will also be no visible signs of raw cake.

How to Serve?
