Easy Red Velvet Mug Cake Recipe:

This Red Velvet Cake Mug takes minutes to prepare and only 90 seconds to cook in the microwave. The results are a delicious single serving cake when you crave something sweet.

My kids love red velvet cake and this is the perfect serving for them. Everything is mixed together in the mug and cooked in the microwave. Making a cake in the mug is the perfect amount of cake instead of making an entire cake.

You can make a mug cake with many different flavors. We have even made Keto Mug Cake. We love to enjoy this straight from the microwave topped with a delicious cream cheese frosting.

Ingredients needed - flour, sugar, cocoa powder, baking powder, milk, oil, vanilla, red food coloring, cream cheese, powdered sugar

Ingredients:

For the Mug Cake:

  • All Purpose Flour
  • Granulated Sugar
  • Unsweetened Cocoa Powder
  • Baking Powder
  • Milk
  • Vegetable Oil
  • Vanilla Extract
  • Red Food Coloring

For the Frosting:

  • Cream Cheese (softened)
  • Confectioners Sugar

How to Make a Red Velvet Mug Cake:

  • Step 1 – Combine Ingredients – In a large microwave safe mug, stir together the dry ingredients for the mug cake.  Then add in the wet ingredients – vegetable oil, vanilla extract and red food coloring.  Stir until the ingredients are combined and the cake is a deep red color.
  • Step 2 – Microwave – Microwave for 90 seconds on full power until the cake has risen and is cooked through.
  • Step 3 – Combine Frosting Ingredients – In a separate bowl, stir together the cream cheese and confectioners sugar.  Spread on top of the cooled mug cake and enjoy!

How to Tell When it is Done:

You will know that your cake is done when the cake has risen in the mug. There will also be no visible signs of raw cake.

How to Serve:

Serve the cake in the mug. There is no need to place the cake in the separate plate. Top the cake with the cream cheese frosting or whipped cream would also be delicious.

We have even dusted the red velvet cake with powdered sugar.

Tips for Making the Perfect Mug Cake:

  • Red Food Coloring – I used a gel food coloring to get a vibrant color.  If you use a liquid food coloring, you may need to use more to get the correct color.
  • Overflowing Cake – If you cake overflows in the mug then you may be using to small of a mug. Make sure to use a mug that was at least 12.5 ounces. You can also use a small bowl.
  • Hard Cake – If you find that your cake is hard or rubbery then you probably have cooked the cake to long. In most microwaves 90 seconds of time cook this chocolately cake. You may need to reduce the time to 80 seconds.

Recipe Variations:

  • Change the Frosting – You can top the cake with whipped cream or powdered sugar.
  • Toppings – Drizzle the cake with chocolate syrup or sprinkle with chocolate chips.
  • Change the Cake – Feel free to make different flavors of cake. We have made vanilla, chocolate and even keto friendly cakes.
  • Fresh Fruit – Top the cake with fresh berries with whipped cream for a rich and decadent dessert.
