Beat together the cream cheese, powdered sugar and vanilla extract with a hand held mixture until well combined.
Cut the tops off of each strawberry and place them on a platter or baking sheet with the cut side down. Then cut an “X” into the pointed end of the strawberry and be careful not to cut all the way through the strawberry.
Place the cream cheese mixture into a pastry bag and pipe the mixture into the center of the “X” on each strawberry.
Then top the mixture with a blueberry.
Place the strawberries in the refrigerator for at least 1-2 hours and then they are ready to serve.
If you do not have a pastry bag, you can put the mixture in a ziplock bag and cut the corner off of one side of the bag to use to pip the mixture into the strawberries.
You can use granulated sugar instead of powdered sugar, I just find that this gives the mixture a grainy texture so I prefer powdered sugar.
Store leftover strawberries in the refrigerator in an airtight container for up to 3 days.
