Strawberry Cobbler

Ingredients

For the Strawberry Mixture:

  • 2 pounds Fresh Strawberries cleaned and diced
  • 1/2 cup Granulated Sugar
  • 1 Lemon juiced
  • 2 Tablespoons Cornstarch

For the Crust:

  • 1 cup All Purpose Flour
  • 1/2 cup Butter melted and cooled
  • 1 cup Granulated Sugar
  • 1/2 teaspoon Salt
  • 1 1/2 teaspoons Baking Powder
  • 1 cup Whole Milk room temperature
  • 1/2 teaspoon Vanilla Extract

Instructions

  • Preheat the oven to 350 degrees F and spray an 8X11 baking dish (I used a corning ware dish) with a non-stick cooking spray.
  • Mix the strawberry mixture gently together in a medium sized mixing bowl.
  • In a separate bowl, stir together the flour, sugar, baking powder, salt, milk and vanilla extract.  Then slowly mix in the melted butter.  Be careful not to over mix.  A few lumps are fine.
  • Pour the batter into the baking dish in an even layer.  Spoon the strawberry mixture on top of the batter.  Do not stir the strawberries into the batter.
  • Bake for 35-40 minutes until the cobbler is golden brown.
  • Serve warm topped with ice cream or whipped topping.  Enjoy!

Notes

Store the leftovers in an airtight container for up to 5 days.
