Strawberry Lemon Blondies have the perfect combination of lemon flavor and fresh strawberries. The yummy glaze perfectly complements the bars for a great dessert.
Preheat the oven to 350 degrees F and line a 9X9 inch pan with parchment paper.
Mix together the flour, baking powder and salt. Set aside.
With a stand up mixer or hand held mixer cream together the butter and sugar until light and fluffy. Scrape down the side of the bowl. Then add in the egg, lemon juice and lemon zest. Mix until combined.
Gradually add the dry ingredients into the wet ingredients and mix until just combined. Be careful not to over mix the batter.
Then fold in the diced strawberries and chocolate chips with a wooden spoon or spatula.
Pour the mixture into the baking pan and tap the pan on the countertop to even it out in the pan.
Bake for 35-40 minutes until the edges are slightly browned and a toothpick inserted into the center of the brownies comes out clean.
For the Glaze:
Puree the strawberries in a food processor or blender. Add the powdered sugar, pureed strawberries and milk to a mixing bowl and stir until the glaze is formed.
If the glaze is too thick, add more milk and if the glaze is too thin, add more powdered sugar until it’s the consistency that you prefer.
Pour the glaze over the blondies and spread it out evenly with a knife or spatula. Let the glaze set and then the blondies are ready to slice, serve and enjoy!
Notes
Store the leftover blondies in an airtight container at room temperature for up to 5 days.
