Variations
- Lemon Glaze. Swap lemon for the strawberries to change the glaze flavor.
- Add-ins. Toss in a handful of white chocolate chips, walnuts or pecans into the mixture before baking.
- Buttercream. Skip the glaze and add a rich buttercream icing on top if you prefer.
- Fruit. Change the flavor entirely and use blueberries instead of strawberries in the recipe. The change in flavor is another tasty option.
How to make Strawberry Lemon Blondies
- Step 1. Preheat the oven and prepare the pan. Preheat the oven to 350 degrees F and line a 9X9 inch pan with parchment paper.

Step 2. Combine the dry ingredients together in a mixing bowl.

Step 3. Next, cream the butter and sugar with a stand mixer or hand mixer. The texture should be light and fluffy. Make sure to scrape down the sides of the bowl.

Step 4. Then add in the egg, lemon juice and lemon zest. Mix until combined.

Step 5. Next, add the lemon juice and lemon zest. Mix until combined.

Step 6. Combine the wet and dry ingredients until just combined. Don’t over mix the batter. Add the strawberries and chocolate chips.

Store the leftover lemon strawberry blondies an airtight container at room temperature for up to 5 days. We suggest placing wax paper in between the bars to prevent them from sticking.
If you need to extend the storage time, the blondies can be frozen. Place the bars inside a storage container and freeze up to 3 months. Thaw overnight in the fridge and serve as normal.
Pro Tips
- Fresh Lemon Juice. We recommend using fresh lemon juice in this recipe for the most vibrant and fresh taste. Since you already have the lemon for the zest, you can also use it for the blondies.
- Strawberries. Fresh strawberries are best. Frozen strawberries are not recommended due to the moisture in them. They will make the blondies soggy.
- Don’t overbeat. Be careful not to overbeat when combining the ingredients.
- Thinner bars. You can use a 9×13 pan instead of a 9×9 baking dish. We prefer the thicker bars but you can opt for this instead. Just adjust the cooking time as it will be less.
- Be careful to not overbake. The bars are supposed to be chewy. Overbaking will make them dry.
- Adding the glaze. Make sure the blondies are completely cool before adding the glaze. It will melt if they are still warm.
- Allow to set before slicing. Let the glaze set for a few minutes before slicing. It will be easier and cut cleaner.
- Glaze. Adjust the glaze until it is the consistency that you prefer. You may have to adjust the amount of milk or powdered sugar.
- Batter. Try to smooth out the batter in the pan as best as you can. You want them to bake flat on top so they look the best for serving.

For the Blondies:
- Preheat the oven to 350 degrees F and line a 9X9 inch pan with parchment paper.
- Mix together the flour, baking powder and salt. Set aside.
- With a stand up mixer or hand held mixer cream together the butter and sugar until light and fluffy. Scrape down the side of the bowl. Then add in the egg, lemon juice and lemon zest. Mix until combined.
- Gradually add the dry ingredients into the wet ingredients and mix until just combined. Be careful not to over mix the batter.
- Then fold in the diced strawberries and chocolate chips with a wooden spoon or spatula.
- Pour the mixture into the baking pan and tap the pan on the countertop to even it out in the pan.
- Bake for 35-40 minutes until the edges are slightly browned and a toothpick inserted into the center of the brownies comes out clean.
For the Glaze:
- Puree the strawberries in a food processor or blender. Add the powdered sugar, pureed strawberries and milk to a mixing bowl and stir until the glaze is formed.
