- 2 cups Chopped Fresh Strawberries
- 1 cup Plain Greek Yogurt
- 1 Tablespoon Honey or Maple Syrup
- 1 teaspoon vanilla Extract
- 2 cups Semi-Sweet Chocolate Chips
- 2 Tablespoons Coconut Oil
Get Recipe Ingredients
Stir together the strawberries, yogurt, honey or maple syrup and vanilla extract together in a large mixing bowl.
Line a baking sheet with parchment paper. Drop approximately 2 tablespoons of the strawberry mixture onto the baking sheet to form clusters.
Place the baking sheet in the freezer and freeze until the clusters are frozen solid (approximately 1-2 hours).
Add the chocolate chips and coconut oil to a large microwave safe bowl. Microwave for 15-20 second intervals, stirring after each interval, until the chocolate is fully melted. Be careful not to over cook the chocolate.
Dip the frozen strawberry clusters into the chocolate mixture with a spoon until thoroughly coated in the chocolate. Then return the cluster to the baking sheet.
Once all the strawberry clusters are coated with chocolate, place back in the freezer for 5-10 minutes until the chocolate is fully set.
Then the strawberry yogurt bites are ready to enjoy!
Store these strawberry yogurt bites in an airtight container in the freezer for up to 1 month. I
like to let them defrost slightly at room temperature (1-2 minutes) before eating them.
