Strawberry Yogurt Bites

Strawberry Yogurt Bites taste like a delectable frozen treat. These frozen yogurt bites require only six ingredients and take minutes to prepare.

Ingredients

  • 2 cups Chopped Fresh Strawberries
  • 1 cup Plain Greek Yogurt
  • 1 Tablespoon Honey or Maple Syrup
  • 1 teaspoon vanilla Extract
  • 2 cups Semi-Sweet Chocolate Chips
  • 2 Tablespoons Coconut Oil

Instructions

  • Stir together the strawberries, yogurt, honey or maple syrup and vanilla extract together in a large mixing bowl.
  • Line a baking sheet with parchment paper.  Drop approximately 2 tablespoons of the strawberry mixture onto the baking sheet to form clusters.
  • Place the baking sheet in the freezer and freeze until the clusters are frozen solid (approximately 1-2 hours).
  • Add the chocolate chips and coconut oil to a large microwave safe bowl. Microwave for 15-20 second intervals, stirring after each interval, until the chocolate is fully melted.  Be careful not to over cook the chocolate.
  • Dip the frozen strawberry clusters into the chocolate mixture with a spoon until thoroughly coated in the chocolate. Then return the cluster to the baking sheet.
  • Once all the strawberry clusters are coated with chocolate, place back in the freezer for 5-10 minutes until the chocolate is fully set.
  • Then the strawberry yogurt bites are ready to enjoy!

Notes

Store these strawberry yogurt bites in an airtight container in the freezer for up to 1 month. I
like to let them defrost slightly at room temperature (1-2 minutes) before eating them. 
You can easily switch out any of your favorite berries in this recipe to make this recipe your own.
