Triple Berry Cobbler

Triple Berry Cobbler is loaded with fresh berries and topped with a golden cobbler topping. The berry filling and crust result in a delicious dessert. It's even better topped with vanilla ice cream.

Ingredients

For the Berry Mixture:

  • 3 cups Strawberries quartered
  • 3 cups Blackberries
  • 3 cups Raspberries
  • 3/4 cup Granulated Sugar
  • 1 Lemon juiced
  • 2 Tablespoons Cornstarch

For the Crust:

  • 1 cup Butter softened
  • 1 cup Granulated Sugar
  • 1/2 tsp Salt
  • 2 tsp Baking Powder
  • 2 cups All Purpose Flour
  • 1 tsp Vanilla Extract

Instructions

  • Preheat the oven to 350 degrees F and spray a 9X13 baking dish with a non-stick cooking spray.
  • Rinse the berries.
  • Mix the berry mixture gently together in a medium sized mixing bowl. Set aside for 10-15 minutes.
  • Pour the berry mixture into the prepared 9X13 baking dish.
  • In a separate bowl, whisk together the flour, baking powder and salt.  Set aside.
  • Beat together the softened butter, sugar and vanilla until well combined.  Then mix in the dry ingredients. The mixture will be dry and crumbly.
  • Pour the batter on top of the berry mixture in the baking dish.
  • Bake for 30-35 minutes until the cobbler is golden brown and the fruit mixture is bubbly.
  • Serve warm topped with ice cream or whipped topping.  Enjoy!
