MINI EASTER CHEESECAKES

DESSERTS ON A DIME

Mini Easter Cheesecakes are the perfect mini cheesecake recipe. The cheesecake filling tops graham cracker crust and decorated with shredded coconut and robin eggs.

COOK Time: 20 MINS

Ingredients

– Graham Cracker Crumbs – Butter  – Cream Cheese – Granulated Sugar – Vanilla Extract

MIX GRAHAM CRACKER

Mix together the graham cracker crumbs and the melted butter.

LINE MUFFIN PAN

Line a 12 cup muffin tin with cupcake liners. Then press  1 ½ tablespoon of the graham cracker mixture into the bottom.  Set the pan aside.

BEAT CREAM CHEESE

In a medium size mixing bowl. Beat cream cheese, vanilla, and sugar together until combined. Then add in the eggs

BAKE

Spoon the mixture evenly over the top of the crust. Bake for 15-20 minutes or until the centers of the cheesecakes are almost set.

SERVE

Top each of the cheesecakes with the shredded coconut. Then add 3-4 of the Robin Eggs and serve!
