I’m a fan of anything with cinnamon so the idea of turning Cinnamon Rolls into a cookie recipe seemed like a great idea! The cookies turned out fabulous and the kids deemed them a hit.

It’s one of my favorite Cinnamon Dessert Recipes.

Why We Love This

They are easy to make even though there are a few steps. The presentation is stunning and everyone will think you spent much more time than you did. The cookies are made from scratch with simple ingredients.

The cinnamon swirl combined with the icing makes these cookies so flavorful.

Ingredients

Ingredients needed - flour, salt, butter, baking powder, sugar, vanilla, eggs, cinnamon, powder sugar, milk

Dough

  • Flour. In order to measure accurately, spoon the flour into the measuring cup. This will help you not pack too much into the cup.
  • Butter. The dough is easier to combine when it is softened first.
  • Vanilla Extract. Use pure vanilla extract.
  • Eggs. Room temperature eggs.

Cinnamon Filling

  • Butter. Melted to make the filling.
  • Cinnamon and Sugar. This is so simple and makes the perfect filling.

Icing

  • Powdered Sugar. Sift to remove lumps before using.
  • Milk. I like to use whole milk as it makes it so rich.

Recipe Variations

  • Chocolate Chips – Add chocolate chips to the cookie dough once you have rolled the dough out.
  • Nuts – Chopped pecans or walnuts to the cookie dough to add flavor and crunch to your cookie.
  • Frosting – Use a cream cheese frosting instead of the powdered sugar icing.
  • Cookie Dough – You can make the cookie base from scratch or buy premade cookie dough.
  • Cinnamon Filling – We used granulated sugar, but you can use brown sugar and cinnamon to make the filling.

How to Make Cinnamon Roll Cookies

  • Step 1 – In a mixing bowl, stir together the flour, baking powder and salt.

Step 2. Next, in a separate large bowl add the butter and sugar. Blend together until smooth. We recommend using a stand mixer or a hand-held mixer for this. Then add in the eggs and vanilla and blend until combine.

Step 3. Now gradually hand stir in the flour mixture until just combined.  Be careful that you do not over mix.

Step 4. Divide the dough evenly into 2 separate bowls.  Wrap each dough with wax paper and refrigerate for 30 minutes to 1 hour until the dough is firm.

Step 5. Remove the dough from the refrigerator.  Then place one of the dough on parchment paper or wax paper. Lightly dust with flour. Then with a rolling pin, roll out the dough until a rectangle approximately ¼ in thick.

Step 6. Follow the same process with the other batch of the dough.  Spread approximately 1 tablespoon of melted butter on top of each of the dough rectangles.

Step 7. Then mix together the cinnamon and sugar for the filling in a small bowl. Sprinkle half of this amount on each rectangle as well.

Step 8. Next, roll both of the logs gently starting on one side of the rectangle. Gently remove the bottom wax or parchment paper as you roll.

Step 9. If the dough is too soft, refrigerate it again so that it’s easier to work with. Wrap both of entire logs with plastic wrap after it’s formed and refrigerate. Then unwrap and cut the log into slices to make the cookies. Place them on an ungreased cookie sheet.

Step 10. Bake until the cookies are lightly browned on the sides. Allow to cool on a wire rack. While cooling, make the icing by whisking all the icing ingredients together.

Step 11. After the cookies have cooled, drizzle over the cookies and enjoy.

Pro Tips

  • Harden Dough – If the cookies are sticking or hard to work with, just place in the fridge to harden the dough.
  • Cooling Cookies – Let the cookies cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely. This will help to cookies settle and prevent them from breaking.
  • Silicone Baking Mat – To easily roll the dough flour the surface or use a silicone baking mat.
  • Cooling Rack – Cool Cookies on a wire rack before serving.
  • Stand Mixer – We recommend using a stand mixer fitted with a paddle attachment to mix the ingredients. Make sure to scrap the sides of the bowl to make sure all the ingredients are mixed together.
  • Baking Sheet – Line baking sheet with parchment paper to easily remove the cookies for the pan.
  • Chill Dough – After mixing the ingredients together, make sure you allow the dough to chill for at least 30 minutes. This makes for better cookies.

How to store?

Place cookie in air tight container once they have cooled to room temperature. The cookies will stay fresh for up to 5 days. You can easily make these cookies ahead of time and store until ready to serve.

Can you freeze the cookies?

This is a great recipe to prepare ahead of time and the freeze the dough.
Prepare the cookie dough as indicated and separate into two large dough balls.
Wrap the dough balls in plastic wrap and wax paper and place in the freezer.
When you are ready to make the cinnamon roll cookies, thaw the dough in the refrigerator.
Once thawed place dough and begin kneading dough to make it soft.
Then Begin Rolling dough flat to add the cinnamon sugar filling.

You can also freeze the leftover cookies if you prefer. Cool cookies completely and store in a freezer container for up to 3 months. This is the best cookie to make ahead of time to prepare for all your holiday baking.

Can I Use Premade Sugar Cookie Dough?

We made this cookie base from scratch but you can easily use premade sugar cookie dough. The cinnamon and sugar cookie layer is what makes these cookies stand out. It makes it look like mini cinnamon rolls but in a cookie form.
Use whatever base you prefer for these cookies. We had all the ingredients so it was an easy and budget friendly way to make these cookies.

  • Bake for 11-14 minutes until the cookies are lightly browned on the sides.
  • Remove the the oven, cool for approximately 5 minutes and then transfer to a wire rack to cool completely.
  • While the cookies are cooling, make the icing by whisking all the icing ingredients together. After the cookies have cooled, drizzle over the cookies and enjoy!
