We love using this to bake because of the low gluten content. This allows the cakes to be less dense, tender and soft. But you can easily use it for other bake goods such has biscuits, scones, or pancakes.

Often times I will substitute all-purpose flour for cake flour as I love how my bake goods turn out. You may not keep it stocked in your pantry but using this recipe is easy to do.

Ingredients

  • Flour. Plain, all-purpose flour.
  • Cornstarch. Just a little bit combines to make this.

Step By Step Instructions

Step 1 – Remove 2 Tablespoons of flour from the 1 cup of flour in a measuring cup. Level the spoon each tbsp of flour.

Step 2 – Whisk together the remaining flour and the tablespoons of corn starch. The flour and tbsp of cornstarch should be thoroughly combined in a bowl.

Flour sifted until fine.

Step 3 – Sift the mixture with a fine-mesh sieve twice to ensure that the ingredients are thoroughly combined. Some like to do this 4-5 times, but I find twice is sufficient.

Step 4 – This is good for 1 cup of cake flour which makes it so easy. The entire process is simple and inexpensive.

Do you have to use this in all recipes?

Cake flour is best to use when making homemade cakes, cookies and muffins. Since it creates a soft texture, it is an option that I like to use when making homemade baked goods.

But I still use all-purpose flour when recipes calls for cake flour. You can easily use what you prefer.

What is the Best Flour for Baking?

It will depend on what you are baking. Most families keep all purpose flour stocked because it can be used in all bake goods. But if you want a softer, dense texture then you can easily use cake flour.

All Purpose Flour is best for cookies, bread, pie crust, and pasta. Cake Flour is best for white cake, vanilla cake, and muffins because it’s a low protein flour.

What is cake flour?

Cake Flour or pastry flour is a type of flour that has a low protein content that has a fine consistency made of soft wheat. Since cake flour has a lower protein content. That means that less gluten content is formed as it is mix with other ingredients.

This creates a softer, fluffy texture in your bake goods. You can buy this at the store and one popular brand is Swans Down. More options include Softasilk and King Arthur unbleached cake flour.

Cake Flour – Is great for vanilla cake, white cake or vanilla cupcakes.
All Purpose Flour – Since it has a medium protein it is great for chocolate chip cookies, cake with cocoa powder and homemade pizza dough.
Bread Flour – Use this for all your homemade bread because of its high protein levels.

How to substitute cake flour for all-purpose?

If you want to substitute for ap flour, you will substitute 1 cup of all purpose with 1 cup of cake flour or wheat flour.

Does cake flour have baking soda in it?

It does not contain any raising agents. You will need to use baking soda or baking powder when using it to make your cake.

    Great recipes and ideas. One question though. When mixing the flour and cornstarch to make cake flour, you mention shift the flour mixture twice. I always was taught it was sift the dry ingredients together. Is shift a new term, new way of mixing? It is mentioned twice in the recipe.
