Can I Use a Homemade Graham Cracker Crust?

Yes, you can make a Homemade Graham Cracker Crust. This No Bake Graham Cracker is easy to make and only requires a few ingredients.

We used an already prepared graham cracker crust in this recipe, but homemade works great too.

Ingredients

Ingredients needed - cream cheese, lemon juice, powdered sugar, cool whip, graham cracker crust, cherry pie filling
  • Cream Cheese. Softened at room temperature.
  • Lemon Juice. Fresh lemon juice is best.
  • Powdered Sugar. Sift the powdered sugar it is lumpy.
  • Cool Whip. Thaw completely before using.
  • Prepared Graham Cracker or Baked Pie Crust. Either option is delicious.
  • Cherry Pie Filling. This should be chilled.

Substitutions and Additions

  • Whipped Cream – You can use cold heavy whipping cream instead of cool whip if you prefer. Make sure to beat it until it forms stiff peaks.
  • Change the Crust – You can do an Oreo Crust or you can even make your own Homemade Graham Cracker Crust. You can crush graham crackers in a food processor. Then mix the graham cracker crumbs with melted butter.
  • Add Some Flavor – For some additional flavors, stir in lemon juice.
  • Cream Cheese – We used full fat cream cheese but you can use other types. Low fat or fat free cream cheese can be used for this recipe.

How to Make No Bake Cherry Cheesecake

Step 1. In a medium bowl, beat the cream cheese and cool whip together.  Add lemon juice and powdered sugar to the mixture. Mix until the texture is creamy.

Step 2. Spread the cheesecake filling mixture into the pie crust.

Step 3. Then spread it out evenly with a rubber spatula. Allow to chill several hours. I suggest at least 3-4 hours but overnight is best.

Step 4. After chilling for several hours, top the cream cheese layer with the chilled pie filling. Refrigerate until ready to serve.

Why is My No Bake Cheesecake Not firm?

Overmixing the cheesecake mixture can result in a cheesecake that is not firm. Make sure to only mix for the instructed amount of time and not any extra. 

Pro Tips

  • Softened Cream Cheese – Make sure the cream cheese is softened before mixing or it will not mix smoothly. If not, you will get big cream cheese lumps. If you are in a hurry, you can cut the cream cheese into smaller pieces to help it soften quicker.
  • Mixing Ingredients – You will need a stand mixer or a hand-held mixer. Either of these will work but I prefer my stand mixer. It makes everything even easier and definitely gets plenty of use. 
  • Refrigerate – Keep refrigerated until ready to serve it is best served cold.
  • Graham Cracker Crust – You can use a store bought graham cracker crust or make your own. Both will result in a delicious cheesecake.

Cheesecake Toppings

  • Any Pie Filling – We love this cheesecake topped with cherry pie filling but you can use any fruit you like. Strawberry pie filling is also really tasty and so is blueberry. 
  • Fresh Fruit – The possibilities are endless. Fresh fruit is always delicious. We love to cut up strawberries for a great topping idea. Blueberries and blackberries are also tasty.
  • Sauce and Nuts – You can skip the fruit and drizzle syrup on top. Make homemade caramel saucehot fudge and chopped pecans on top to make a turtle cheesecake. This is so decadent and amazing.
  • Homemade Whipped Topping Cream – Top with homemade whipped cream and you are set.

Storage

No Bake Cherry Cheesecake is the perfect dessert to make ahead of time. It is also easy to store leftovers. Cover your cheesecake with a plastic wrap and place in the refrigerator. The cheesecake will stay fresh for up to 5 days.

If you are planning on having leftovers, I recommend not topping the entire cheesecake. If you have fruit, whipped cream or other topping it could cause the cheesecake to be mushy.

Just top each slice as your are serving it.

How to Freeze

We do not recommend freezing no-bake cheesecake to get it to set. The refrigerator is the perfect place to have the cheesecake set.

But you can freeze no-bake cherry cheesecake after it has set to the right texture. When we are planning on freezing it, we recommend double-layering the cover over the cheesecake.

Place a plastic wrap and then aluminum foil over the cheesecake and make sure it is covered completely. If stored properly the cheesecake will last about 3 months in the freezer.

When you are ready to serve, remove the cheesecake and thaw it in the refrigerator, and then slice. Delicious no-bake cheesecake served any time of the year.
