These bars alternate layers of Butterscotch Pudding and a decadent cream cheese mixture. Everything is topped with cool whip and drizzled with butterscotch sauce and crushed Heath bars.

Ingredients

Crust

  • Graham Cracker Crumbs. You can buy these or make your own by crushing graham cracker sheets.
  • Butter. It needs to be melted.

Cream Cheese Layer

  • Butterscotch Pudding. You can use instant butterscotch pudding or homemade.
  • Cold Milk. Don’t take out of the fridge until ready to use.

Topping

  • Butterscotch Sauce. This is so pretty on top and tastes decadent.
  • Heath Bits. Sprinkle on top to complete the dessert.

Variations

  • Cinnamon Graham Cracker Crumbs. Change the flavor by using different types of graham crackers.
  • Cookies. Crush vanilla wafers or shortbread cookies to use for the crust. Either of these taste great in this recipe. Golden Oreo Cookies also make a great crust.
  • Pudding. Substitute a different flavor of pudding in this recipe. Chocolate, lemon or cheesecake flavors taste great.
  • Nuts. Sprinkle chopped pecans or walnuts on top of the cool whip when you garnish. Sometimes, we put nuts on half and leave the other side plain to suit everyone’s preference.
  • Toppings: Chocolate chips or chocolate shavings also taste great and look pretty on top. Feel free to get creative with toppings and use several different types. Butterscotch Chips also would be good.

How to Make Butterscotch Delight

Step 1. Get out a medium bowl. Stir together the crust ingredients and make sure the sugar and melted butter are well combined.

Step 2. Place the crumbs in a baking pan. You can use the bottom of a flat glass to smooth the crust. Then freeze for 30 minutes while you prepare the other layers. This will make it easier to spread the layers on top of the crust.

Step 3. Beat together the softened cream cheese and powdered sugar with a hand mixer. Gently fold in 1 cup of the whipped topping into the mixture.  Spread this mixture on top of the graham cracker crust. Then allow to chill in the refrigerator while you prepare the other layer.

Step 4. Combine together the milk and the butterscotch pudding mix for 2-3 minutes.

Step 5. Then carefully spread this mixture on top of the cream cheese layer.  Refrigerate the butterscotch pudding layer at least 3 hours to set.

Step 6. Garnish and enjoy. When serving, put the remaining cool whip on top. Drizzle the butterscotch sauce on top and sprinkle with the Heath bits.

Storage

Cover and store Butterscotch Delight in the refrigerator. The layers will start to soften and melt if left out too long.

This will make it difficult to cut. It is best to refrigerate in between serving so it does not get too soft.

When serving at a party or gathering, I normally take it out of the fridge right before it’s time for dessert. Then slice and place back in the fridge.

Pro Tips

  • Do not skip the chilling time in this Butterscotch Delight recipe.  This helps make the beautiful layers in this dessert and makes it easier to cut. This dessert needs ample time in the fridge before cutting.
  • Make sure that your cream cheese has softened at room temperature to make sure it is creamy when mixed together. It will be easier to combine and the texture will be smooth and without lumps.
  • You can crush graham crackers using a food processor instead of buying the graham cracker crumbs. If you do not have a food processor, place them inside a ziploc bag and crush with the back of a spoon or rolling pin.
  • This no bake dessert is best made the day before you want to serve it. The layers thicken and you can easily slice into the bars.

Can I Freeze This Recipe?

Yes, this dessert is easy to freeze. Cover the dish with an airtight lid and place in the freezer up to a month. If there is room under the lid, you can also put a layer of plastic wrap or foil on top.

Then put the lid on top of that. It will help to prevent ice crystals from forming and ensure it stays fresh.

When you are ready to serve, allow it to thaw in the fridge overnight. Then cut and enjoy as normal.
