  • Nuts- Add almonds, peanuts, pecans or walnuts to the recipe.
  • Peanut Butter- Try different types: natural, creamy or crunchy.
  • Nut Butter- You can substitute almond butter, cashew butter or sunflower seed butter for the peanut butter.
  • Maple Syrup- Try this instead of honey if you don’t like honey flavor.
  • Dried fruit- add dates, raisins or even cranberries.
  • Mini M&M’s- For a treat, add the small M&M candies to the bars.
  • Sea Salt. Sprinkle sea salt on top of the bars.
  • Coconut. Add coconut to the no bake peanut butter bars.

How to make peanut butter oatmeal bars

Peanut butter mixture in pan.

Step 1. First, you need a medium saucepan. Add the peanut butter and honey to the pan and cook over medium heat. Melt the mixture and make sure to stir this constantly while it cooks.

Oats added to melted peanut butter mixture.

Step 2. Next, remove from heat. Pour the rolled oats into the mixture while it is still hot. Stir together until the ingredients are combined.

Mixture pressed into pan.

Step 3. Place the oat mixture in an even layer in a baking dish. Place in the fridge until the bars firm up so you can cut them easily.

Mixture cut into bars.

Step 4. Once the texture is firm, cut into squares or bars.

Pro Tips

  • Cut into bars. If you have younger children with smaller appetites, cut into smaller portions. This recipe is easy to customize for your needs. I usually do some regular size granola bars and then a few smaller ones.
  • Allow the bars to set. The mixture needs to go into the fridge to firm. Don’t cut before this or they will fall apart.
  • Stir constantly while cooking. The peanut butter and honey mixture needs to be stirred constantly while cooking.

Storage

After you cut the bars, I like to stack them in an airtight container with lid or ziplock bag. I also use parchment paper in between the bars. This will prevent them from sticking to each other. You can also wrap them in plastic wrap.
