What Are Chocolate Wafer Cookies?

They are thin and crispy round cookies with chocolate flavor. Numerous recipes call for these cookies to make crusts for pies, cheesecake recipes, ice cream sandwiches and more.

Ingredients

Chocolate wafer cookie ingredients - flour cocoa powder, egg, sugar, vanilla, salt, butter, milk.
  • All Purpose Flour. Spoon the flour into the measuring cup instead of scooping it. This helps to prevent you from packing too much flour into the cup.
  • Cocoa Powder. Use Dutch process cocoa powder.
  • Large Egg. Allow to sit at room temperature before using.
  • Granulated Sugar. Regular white granulated sugar.
  • Vanilla Extract. You want to use pure vanilla for the best flavor in the cookies.
  • Salt. Helps to enhance the flavor.
  • Butter. Unsalted and softened.
  • Milk. Whole milk is suggested.

Step By Step Instructions

Step 1. Use the bowl of a stand mixer and beat together the butter and sugar. I like to use my stand mixer but you can use a hand mixer if you prefer. Next, add the egg and vanilla extract until combined.

Step 2. Get out a separate medium bowl. Whisk together the flour, cocoa powder, baking powder and salt.

Step 3. Next, gradually combine the dry ingredients to the butter mixture.

Step 4. Mix on low speed using an electric mixer until just combined.  Be careful not to over mix.

Step 5. Then add in the milk and stir until combined.

Step 6. Shape the dough into 2 logs. You can use a rolling pin if needed. Then wrap each log in plastic wrap. Allow to chill in the fridge for at least 2 hours. Next, remove the logs from the refrigerator and slice into 1/8-inch-thick slices. You will need a sharp knife.

Step 7. Place the cookies on the prepared baking sheets.

Step 8. Finally, bake the cookies for 10-12 minutes. You will need to rotate the pans halfway through the baking time. Bake until the cookies are just set and appear firm. Let the cookies sit on the baking sheet for 5 minutes.  Then move them to a wire rack to cool completely. 

Storage

Store the leftover cookies in an airtight container for up to 1 week.  Separate each layer of cookies with parchment paper. Keep a piece of bread in the container with the cookies to keep them soft.

Pro Tips

  • Unsweetened Cocoa. There is a lot of sugar in the recipe so make sure to use unsweetened cocoa. You don’t want the cookies to be overly sweet.
  • Dutch Processed Cocoa. This type of cocoa has a deep chocolate flavor and dark color the cookies are known for.
  • Use cookie cutters. If you don’t want to slice the cookie dough, you can roll out and use round cookie cutters.
  • Chill the dough. Don’t skip this step. It makes the dough easier to handle and form into cookies.
  • Don’t overbake the cookies. It can be hard to tell when the cookies are golden brown because of the dark color. Once the tops start to look set, they are ready to come out of the oven.
  • Thickness of dough. The cookies should be sliced into ⅛ inch thickness. Be careful to not make them too thin or too thick or they won’t hold up.

Instructions

  • Beat together the butter and sugar in a large bowl with a hand held mixer or stand up mixer until creamy.  Then add in the egg and vanilla extract until combined.
  • In a separate bowl, whisk together the flour, cocoa powder, baking powder and salt.
  • Slowly add the flour mixture to the butter mixture and mix on low speed until just combined.  Be careful not to over mix.
  • Then add in the milk and stir until combined.
  • From the cookie dough into 2 logs that are approximately 1 ½ inches in diameter. Wrap each log in plastic wrap and refrigerate for at least 2 hours.
  • Preheat the oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
  • Remove the logs from the refrigerator and slice into ⅛ inch thick slices to form them into cookies. Place them on the prepared baking sheets.
  • Bake for 10-12 minutes, rotating the pans halfway through the baking time. Bake until the cookies are just set (look firm). These cookies are dark so you can’t tell when the cookies are slightly golden brown.
  • Allow the cookies to sit on the baking sheet for 5 minutes.  Then move them to a wire rack to cool completely.  Enjoy!
