Variations
- Apple pie filling – Make a cinnamon roll apple pie version with pie filling. Spread this on top before baking. Just skip the brown sugar pecan topping.
- Pumpkin pie – We like to use pumpkin pie filling on top of the cinnamon roll pie crust. It is a tasty combination.
- Icing – We used the can that was included in the cinnamon rolls. If you want more frosting, you can use a can of store bought and drizzle even more or make a drizzle with powdered sugar, vanilla extract and milk.
- Nuts – While pecans are delicious in this recipe, we also love walnuts. You can also omit the nuts all together if you prefer.
How To Make Cinnamon Roll Pie
- Step 1 – Preheat the oven and prepare the pan. Preheat the oven to 350 degrees and spray a pie pan with a non-stick cooking spray.

Step 2. Cut the cinnamon rolls in half so that you make 2 thinner cinnamon rolls.

Step 3. Sprinkle the flour on a working surface. Then use a rolling pin to roll out the cinnamon rolls with flour to make them thin.

Step 4. Place the rolls in the 9 inch pie plate. Press the cinnamon rolls into the pan to form the crust.

Step 5. Combine the brown sugar mixture.

Step 6. Stir together the brown sugar, flour, cinnamon, melted butter and chopped pecans in a mixing bowl.

Step 7. Spread part of this mixture over the crust in the pie pan.

Step 8. Layer the rest of the cinnamon roll dough on top of the pie to make the top crust. Make sure there aren’t any holes and gently press the crust onto the bottom layer of cinnamon roll so that they are pinched together.

Step 9. Then spread the remaining filling on top of this layer of cinnamon rolls.

Step 10. Cover the pie dish with foil and bake for 20 minutes. Then remove the foil and bake for 10 more minutes so the top of the pie is golden brown.

Step 11. Allow the pie to cool on a cooling rack. Then drizzle with the frosting that came in the cinnamon roll packages.
Storage
Room Temperature: Store the pie in an airtight container for up to 2 days. This works best if you plan to eat it within a short time and want to maintain soft texture.
Refrigerator: Keep the pie covered in the fridge for up to 5 days. Allow it to come to room temperature or warm slightly before serving for the best texture.
Freezer: Wrap individual slices or the whole pie tightly in plastic wrap and place in an airtight container. Freeze for up to 2 months. Thaw in the refrigerator or at room temperature before enjoying.

Pro Tips
- Choose the right cinnamon rolls: Original-sized cinnamon rolls work best for this recipe. Larger rolls may be too big and affect the texture of the pie.
- Roll thin: Flatten each cinnamon roll slightly before arranging in the pie dish. Lightly flour your surface to prevent sticking and make rolling easier.
- Press into the pan: Press the rolls together so there are no gaps or cracks, ensuring a uniform, cohesive pie.
- Cover with foil: Cover the pie with foil for the first portion of baking to prevent over-browning, then remove foil to finish baking for a golden top.
- Even spacing: Arrange the rolls evenly to help them bake uniformly and rise consistently.
- Check for doneness: The pie is done when the rolls are golden brown and cooked through; test the center gently with a toothpick if unsure.
- Cool slightly before serving: Let the pie rest for a few minutes before drizzling glaze to prevent it from melting too much and running off.
