What is Cinnamon Pie?

It is a creamy pie with a base of cream cheese, cinnamon, brown sugar and more. It is blended together and poured into a pie crust.

This is a type of spiced pie and really delicious with a dollop of whipped cream on top. While this type of pie is not as common as pumpkin pie or pecan pie, it is absolutely amazing.

Ingredients

  • Premade 9” Pie Crust, unbaked 
  • Cream Cheese, softened at room temperature 
  • Brown Sugar, packed 
  • Large Eggs 
  • Half and Half 
  • All Purpose Flour 
  • Ground Cinnamon 
  • Vanilla Extract 
  • Salt 
  • Powdered Sugar (for serving)

Variations

  • Homemade pie crust – For the sake of time, we used a store bought pie crust. However, feel free to use homemade pie dough if you prefer.
  • Graham Cracker Pie Crust – Substitute a graham cracker pie crust this for the traditional pie crust. It is another great option with the rich cinnamon pie filling.
  • Spices – For added warm flavor, feel free to add a touch of nutmeg. A teaspoon of nutmeg the perfect amount to add.

How to make cinnamon pie

Step 1. Preheat the oven. Then place the pre-made pie shell in a 9 inch pie plate.  Crimp the edges of the pie crust and place it in the refrigerator while you prepare the filling.

Step 2. Combine the brown sugar and cream cheese until the mixture is light and fluffy.

Step 3. Then beat in the eggs, one at a time until all are combined.

Step 4. Combine the mixture together.

Step 5. Gradually add the remaining ingredients.

Step 6. Mix on low speed until the mixture is combined and smooth.

Step 7. Pour the filling into the pie crust and bake the pie. The center will still be jiggly, but it will continue to set as the pie cools.

Step 8. Allow to cool. When you are ready to serve, dust the top of the pie with the powdered sugar.

Tips and Tricks

  • Room Temperature Ingredients – The cream cheese should be softened at room temperature. It will be easier to blend and have a creamier texture. The eggs should also be room temperature.
  • It is better the next day – We think this perfect cinnamon pie recipe is actually better the next day. Try making it the day before you need it.
  • Combining Ingredients – We recommend mixing the ingredients with electric mixer in a large bowl. You can also use a stand mixer.
  • Allow the pie to set – It needs at least 2 hours but 4 is ideal to set. Don’t skip this or the pie will not have the desired texture or outcome.
  • Don’t overbake the pie – The pie will be jiggly but resist the urge to continue baking it. The pie will continue to set as it chills. Overbaking the pie will make it rubbery.

Toppings

My favorite combination is a sprinkle of powdered sugar, dollop of whipped cream and a dash of cinnamon on top. Not only does it look pretty but it tastes really delicious.

Each bite is simply amazing. I love to enjoy a big slice of pie with a cup of hot coffee. I like to serve this pie for Christmas dinner and Thanksgiving with all of these toppings.

How to Store Leftovers:

Refrigerate any leftover pie covered for up to 5 days.  

Can I Freeze?

Allow the pie to cool completely. Cover in plastic wrap. Place inside a freezer safe container or bag. The pie can be frozen up to 2 months. This is so convenient if you need to make several pies. This recipe freezes really well. When ready to serve pie, thaw in the fridge overnight.

How to Prepare Ahead of Time:

This pie can easily be made the night before serving or up to 2 days in advance. This is a great way to ensure the pie has sufficient time to set. I actually prefer to make this ahead of time.

Instructions

  • Preheat the oven to 350 degrees F and place the pre-made pie crust in a 9 inch pie pan.  Crimp the edges of the pie crust and place it in the refrigerator while you prepare the filling. 
  • Beat together the brown sugar and cream cheese in a large mixing bowl until the mixture is light and fluffy (3-4 minutes). 
  • Then beat in the eggs, one at a time until all are combined. Then on low speed, mix in the half and half, flour, cinnamon, vanilla extract and salt until the mixture is combined and smooth. 
  • Pour the cinnamon filling into the pie crust.  Bake for 35-40 minutes until the edges are set.  The center will still be jiggly but it will continue to set as the pie cools. 
  • Let the pie cool completely at room temperature.  Then cover the pie and chill for at least 2-4 hours.  When you are ready to serve, let the pie sit at room temperature for 1 hour. 
  • Dust the top of the pie with the powdered sugar, then the pie is ready to slice, serve and enjoy!
