These darling cupcakes are so whimsical and pretty. It is such a fun cupcake recipe with tasty buttercream icing. The bright blue color is so pretty, and the candy googly eyes and cookie mouth complete the Cookie Monster look.

Ingredients

Cupcakes

  • Chocolate Cake Mix. You can use your favorite brand but make sure it is 16 ounces.

Frosting 

  • Unsalted Butter. Softened at room temperature.
  • Powdered Sugar. Sift the powdered sugar until smooth.
  • Milk. Whole milk is suggested.
  • Clear Vanilla Extract. Clear Vanilla results in the prettiest frosting with the best color.
  • Bright Blue Food Coloring. Gel is preferred and we like Wilton’s.

Decorations 

  • Large Candy Eyes. The larger size will look more closely to Cookie Monster.
  • Mini Chocolate Chip Cookies. The mini size is perfect for this recipe.

  • Step 1. Preheat the oven and prepare the pans. Preheat the oven to 350 degrees Fahrenheit and line 2 cupcake pans with liners.

Step 2. Combine the cake mix. Use a large bowl, stir together the cake mix, water, vegetable oil and eggs.

Step 3. Fill the cupcake liners with batter about ¾ full. Bake for 18-21 minutes or until a toothpick inserted into the cupcakes comes out clean. Then allow to cool completely on wire racks before adding frosting.

Step 4. While the cupcakes cool, make the frosting. Cream together the butter and powdered sugar until smooth.  Next, add the milk and vanilla extract. Combine for 1-2 minutes until the frosting is light and fluffy. Do not continue to mix once combined or you will overmix the ingredients.

Step 5. Finally, add in the blue food coloring until the frosting is a bright blue color the same shade as Cookie Monster.  Continue to gradually add the color until it is the desired shade of blue.

Step 6. Put the buttercream frosting into a piping bag. Pipe the frosting onto each of the cupcakes with a star tip.

Step 7. Then top each frosted cupcake with 2 candy eyes towards the top of the cupcakes. They do not have to be perfectly even as it will resemble Cookie Monster’s googley eyes if they aren’t. Place a cookie toward the bottom to look like the cupcake is eating the cookie. 

Expert Tips

  • Food color. We recommend using Wilton gel food coloring for a bright blue color. Continue to add a small amount of food coloring until it is the desired shade of blue. Gel food coloring is preferred over liquid food coloring.
  • Mini Cookies. Chips Ahoy Mini Cookies work perfectly for the cupcake decorations. If you don’t have these, you can break a regular size cookie in half and use that. Feel free to use store bought or homemade cookies.
  • Star Piping tips. We used a star tip to pipe the frosting on the cupcakes. You could also use a grass piping tip for a different look.
  • Sprinkles. Another variation of these cupcakes include using buttercream icing and topping with blue sprinkles. This will look like Cookie Monster’s fur if you want another option.
  • Fill the liners. Pour the batter until it is ¾ full. You do not want to overfill the cupcake liners, but you also want enough so that is full when you decorate.
  • Allow to cool. Make sure the cupcakes have completely cooled before decorating. The icing will start to run and get messy if decorated too soon.
  • Don’t overmix the frosting. You want there to be air pockets in the frosting. Overmixing will get rid of these and the frosting will not be as light and fluffy.

Storage

Store the leftovers in an airtight container for up to 1 week. Room temperature is best as the refrigerator will dry these cupcakes out.

You can make these in advance for a party or special occasion. However, I would only make them a day in advance so they look their best.

Either option will work in this recipe. We like to use the Mini Chips Ahoy cookies but you can use homemade if you prefer.
