It’s an easy no bake recipe with simple to follow instructions. The ingredient list is simple, and anyone can make this cheesecake. Each bite is so delicious, and the results are absolutely amazing.

Ingredients

Ingredients for Fruity Pebbles Cheesecake - Fruity Pebbles cereal, butter, cream cheese, sour cream, powdered sugar, vanilla, cool whip.

Crust

  • Fruity Pebbles Cereal. Using the cereal in the crust packs in even more Fruity Pebbles flavor.
  • Melted Butter. I used unsalted butter.

Cheesecake Filling

  • Cream Cheese. Softened at room temperature.
  • Sour Cream. Full fat sour cream is suggested.
  • Powdered Sugar. Sift before using to remove any lumps.
  • Vanilla Extract. Pure vanilla extract is best.
  • Cool Whip. Store bought or Homemade Whipped Cream Recipe.
  • Fruity Pebbles Cereal. Make sure the cereal is fresh.

Substitutions and Additions

  • Chocolate Version. Swap the Fruity Pebbles with Cocoa Pebbles for a chocolate cheesecake.
  • Graham cracker crust. Substitute crushed graham crackers to make the crust instead of Fruity Pebbles. You can also use nilla wafers.
  • Fruit Loops. Try a new variation with Fruit Loops cereal instead of Fruity Pebbles.

Step by Step Instructions

Step 1. Crush the cereal using a food processor.  

Cereal combined with melted butter and pressed into pan.

Step 2. Add the crushed cereal to a large bowl. Combine with melted butter and salt. Then press into a pie pan. Make sure to press the mixture up the sides of the pan a little bit. Then freeze for 15-20 minutes so that the crust is set.

Step 3. While the crust sets, make the cheesecake filling. Get out a large mixing bowl and beat together the cream cheese, sour cream, powdered sugar and vanilla. I used a hand mixer.

Step 4. Fold in the cool whip and cereal by hand. Be gently during the mixing process.

Mixture spread into pan over crust.

Step 5. Once combined, spread the mixture into pie crust. Allow it to chill at least 3-4 hours but overnight is best.

Step 6. Once the cheesecake is set, sprinkle the remaining Fruity Pebbles Cereal on top of the cheesecake. Then it’s ready serve.

Storage

Cover the cheesecake in plastic wrap. Then place in the fridge up to 3-4 days. 

Can you freeze the cheesecake? 

You can freeze this cheesecake. Wrap in plastic wrap and again in aluminum foil. Freeze up to 1 month.

When ready to serve, thaw overnight in the fridge.

Pro Tips

  • Softened Cream Cheese. Make sure the cream cheese is softened before mixing or it will not combine smoothly, and you will have a lumpy batter. If you are in a hurry, you can cut the cream cheese into smaller pieces to help it soften quicker. You also want to use brick-style cream cheese not the spreadable kind in a tub.
  • Full Fat ingredients. Make sure to use full fat sour cream and full-fat cream cheese in the recipe. It will hold its shape better.
  • Crush the cereal. The cereal needs to be crushed before using. If the cereal is left whole, the texture may be chewy.
  • Chill the Cheesecake. It needs to chill for several hours but overnight is best. This will give it plenty of time to set before slicing.

Ingredients

  • 3 cups Fruity Pebbles Cereal
  • 1/3 cup Melted Butter
  • 1/4 teaspoon Salt

Instructions

For the Crust:

  • Place the Fruity Pebbles Cereal into a food process and blend.
  • Stir together the crushed cereal, melted butter and salt together in a medium size mixing bowl.
  • Press this mixture into a pie pan, making sure to press the mixture up the sides of the pan slightly, and then freezer for 15-20 minutes so that the crust is set.

For the Cheesecake Filling:

  • In a large mixing bowl, beat together the cream cheese, sour cream, powdered sugar and vanilla extract with a hand held mixer until smooth.
  • Then gently fold in the cool whip and 1 cup of the Fruity Pebbles Cereal.
  • Pour mixture into pie crust, spread it out evenly, and chill several hours (at least 3-4 hours, preferably overnight).
  • After chilling for several hours, top with the remaining Fruity Pebbles Cereal and then it’s ready to slice, serve and enjoy!

Recipe Notes

Keep refrigerated until ready to serve.
Make sure the cream cheese is softened before mixing or it will not mix smoothly and you will get big cream cheese lumps. If you are in a hurry, you can cut the cream cheese into smaller pieces to help it soften quicker.
Refrigerate any leftovers, covered, for up to 3-4 days.
