Pro Tips

  • Mixing Ingredients – When combining the wet and dry ingredients together, make sure you do not over mix. This can make the cookies dry and tough.
  • Cookie Scoop – Use a cookie scoop to divide the dough. This allows evenly place the dough on the baking sheet and the cookies get done about the same time.
  • Placing dough on baking sheet – Place the cookie dough on the baking sheet lined with parchment paper or a silicone mat. Make sure they are placed at least 2 inches apart.
  • Bake Cookies – Bake cookies until the edges are crispy and the center is soft.
  • Marshmallow Topping – Bake the marshmallow after placing on the cookie. This allows it to melt. You can even broil it to get the burnt edges.
  • Scraping the Bowl – Make sure you are scraping down the side to get all the dough.

Storage

Store the cookies in an airtight container up to 1 week. Make sure you do not stack the cookies on top of each other. You do not want them to stick and the marshmallow can become sticky.

These cookies are perfect to make ahead of time.
