Ingredients
- Butter. The butter needs to be slightly softened at room temperature but not melted.
- Sugar. Plain white granulated sugar.
- Brown Sugar. Store bought or Homemade Brown Sugar Recipe.
- Eggs. Room temperature eggs will combine smoother into the batter.
- Cocoa Powder. I like Hershey’s Cocoa Powder.
- Large Marshmallows. Try Homemade Marshmallows.

Substitutions and Additions
- Drizzle with Chocolate – These cookies would be perfect with melted chocolate drizzled over the top.
- Chocolate Chips – You can add semi-sweet chocolate chips to the cookie batter when making the dough. White Chocolate Chips or Dark Chocolate Chips are also good options.

How to Make Hot Cocoa Cookies
- Step 1. Preheat the oven – First, preheat the oven to 350 degrees.

Step 2. Mix Dry Ingredients together – In a medium bowl whisk the all purpose flour, cocoa powder, baking soda and salt.

Step 3. Mix the butter, sugar and vanilla. – In a separate mixing bowl, blend the butter with the sugar, vanilla and butter. Combine with an electric mixer on low speed until ingredients are smooth. We like to use a stand mixer or a hand mixer to mix the ingredients using a paddle attachment.

Step 4. Add Eggs – Add in the large egg 1 at a time until combined. When combining the ingredients make sure to scrape the sides of the bowl.

Step 5. Combine wet ingredients with dry ingredients – Then add in the flour mixture into the wet ingredients. Do not over mix. Make sure to scrape the bowl of a stand mixer. Scoop the cookie dough balls onto a baking sheet.

Step 6. Bake Cookies – Bake for 8-10 minutes until the edges of the cookies are set and middle is still soft.

Step 7. Top with Marshmallows – Place a marshmallow in the center of each cookie and press down slightly.

Step 8. Bake to Melt Marshmallow – Bake for another 2-3 minutes to melt the marshmallow slightly. Transfer the cookies to a wire rack and allow to cool completely.

Step 9. Serve and Enjoy – Dust some cocoa powder over the top of the cookies for decoration. This is optional but looks so pretty on top of the marshmallow.

Pro Tips
- Mixing Ingredients – When combining the wet and dry ingredients together, make sure you do not over mix. This can make the cookies dry and tough.
- Cookie Scoop – Use a cookie scoop to divide the dough. This allows evenly place the dough on the baking sheet and the cookies get done about the same time.
- Placing dough on baking sheet – Place the cookie dough on the baking sheet lined with parchment paper or a silicone mat. Make sure they are placed at least 2 inches apart.
- Bake Cookies – Bake cookies until the edges are crispy and the center is soft.
- Marshmallow Topping – Bake the marshmallow after placing on the cookie. This allows it to melt. You can even broil it to get the burnt edges.
- Scraping the Bowl – Make sure you are scraping down the side to get all the dough.
Storage
Store the cookies in an airtight container up to 1 week. Make sure you do not stack the cookies on top of each other. You do not want them to stick and the marshmallow can become sticky.

Hot Cocoa Cookies
Ingredients
- 1 cup Butter softened (butter needs to be slightly soft at room temperature not melted)
- 1/2 cup Sugar
- 1/2 Cup Brown Sugar
- 2 eggs
- 1 tsp Vanilla Extract
- 2 1/4 cup Flour
- 1/2 Cup Cocoa Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 24-36 Large Marshmallows

Instructions
- Preheat the oven to 350 degrees F.
- In a large bowl combine the flour, cocoa powder, baking soda and salt.
- In a separate mixing bowl, blend the butter with the sugar, vanilla and butter until smooth (I used a hand held mixer or stand up mixer for this).
- Add in the eggs 1 at a time until thoroughly combined.
- Then hand mix in the dry ingredients into the wet ingredients. Do not over mix.
- Scoop approximately 1 Tbsp of the dough onto a baking sheet and ensure that they are approximately 2 in a part.
- Bake for 8-10 minutes until the edges of the cookies are set and middle is still soft.
- Place a marshmallow in the center of each cookie and press them down slightly.
- Bake for another 2-3 minutes to melt the marshmallow slightly.
- Transfer the cookies to a cool rack and allow them to cool completely.
- Dust some cocoa powder over the top of the cookies for decoration.
