What is the secret to making fudge?

It really is quite simple so do not let making fudge intimidate you. The secret to making fudge in the microwave is to melt the ingredients in intervals.

We normally start with 30 second intervals and stir the ingredients each time. You risk burning the ingredients and the fudge hardening if you do not melt in intervals.

Ingredients for Hot chocolate fudge.

Ingredients:

  • Semi-Sweet Chocolate Chips
  • Milk Chocolate Chips, divided
  • Butter
  • Sweetened Condensed Milk
  • Packages of Hot Chocolate Mix (approximately ½ cup)
  • Vanilla Extract
  • Miniature Marshmallows, divided

How to make hot chocolate fudge:

  • Step 1 – Prepare a baking dish. Line an 8X8 or 9X9 baking pan with parchment paper or foil.  Then spray it with non-stick cooking spray.
  • Step 2 – Melt the chocolate. Place the semi-sweet chocolate chips, half of the milk chocolate chips, butter, sweetened condensed milk and the hot chocolate mix in a large microwave safe bowl.
  • Step 3 – Microwave in 30 second intervals. Make sure to stir after each interval until all the ingredients are melted and smooth.  Be careful not to over heat or the chocolate could burn.
  • Step 4 – Add the mini marshmallows. Then stir in the vanilla extract and half of the miniature marshmallows.

  • Step 5 – Pour the mixture into the prepared pan. Press the remaining marshmallows on top of the fudge.  Gently press them down so that they sit into the top of the fudge.
  • Step 6 – Allow the fudge to set. Refrigerate until the fudge is set (4-6 hours).
  • Step 7 – Prepare the topping. Microwave the remaining milk chocolate chips in a small bowl by heating it in 30 second intervals.  Remove from heat and drizzle this melted chocolate on top of the marshmallows on the fudge.

  • Step 8 – Allow the topping to harden. Let this chocolate sit to harden (30-60 minutes).
  • Step 9 – Cut into slices. Then carefully lift the parchment paper or foil out of the pan.  Cut the fudge into pieces and enjoy! Feel free to cut this into the size squares you prefer.

How to store:

Refrigerate the leftover fudge in an airtight container for up to 1 week.  Let the fudge sit at room temperature for 20-30 minutes to soften some and then it’s ready to enjoy!

I suggest placing wax paper in between the layers of fudge to prevent sticking. It makes it easier to handle.

How to freeze fudge:

Place the squares of fudge inside a freezer container. You can use layers of wax paper in between the fudge to make it easy to grab a couple of squares.

If stored properly, fudge can be frozen up to 3 months. This is perfect for the holidays when you have a long baking list. Feel free to make this ahead of time and then take out of the freezer when ready to serve.

Make sure to allow sufficient time for the fudge to thaw. I like to place it in the fridge to thaw overnight.

Another option is to place on the counter for about 2 hours. This should give it enough time to thaw and have the creamy fudge consistency we all love and enjoy.

Fudge recipe tips:

  • You can use cocoa mixture instead of the hot chocolate mix if you prefer in this recipe.
  • Also, you can use a double boiler to melt the chocolate instead of the microwave.
  • Dehydrated Marshmallows can be used for the topping if you would rather. Just keep in mind they will be crunchier and not soft as traditional marshmallows.
