This is a delicious cookie recipe with only a handful of ingredients. It starts with a brownie mix but turns out so rich and decadent.

Each cookie has a fudgy center, and the brownie batter makes the best cookie. We certainly love brownies, but this Brownie Mix Cookie might just be a new favorite.

It is quick enough to whip up for an after-school treat but special enough for birthdays and holidays. We have even made these for a cookie exchange.

Can I Use Brownie Mix for Cookies?

Yes, and it makes the best cookies. You are going to be pleasantly surprised how fabulous a box of brownie mix bakes into cookies.

Ingredients

Ingredients for Brownie Mix Cookies recipe - brownie mix, flour, eggs, powdered sugar.
  • Brownie Mix. You can use any brand but make sure it is 18.4 oz box.
  • All Purpose Flour. Always spoon the flour into the measuring cup instead of scooping it.
  • Large Eggs. Room temperature eggs are best, and the brownie mix will combine better.
  • Powdered Sugar. This is for topping the cookies with and creates that gorgeous crinkle top.

Substitutions and Additions

  • Nuts. Add chopped pecans or walnuts to the brownie batter before baking.
  • Chocolate Chips. Try adding ¼ cup chocolate chips to the mixture. Any variation would be delicious such as: semi-sweet chocolate chips, dark chocolate, white chocolate chips and more.
  • Peanut Butter Chips. The delicious combination of chocolate and peanut butter will be a hit. We love to add peanut butter to these fudgy brownie cookies.
  • Butterscotch chips. This is so rich and decadent. It is super tasty with the chocolate.
  • Sprinkles. Roll the balls in chocolate sprinkles before baking. This will look so pretty and enhance the chocolate flavor. You can also use seasonal sprinkles to make these for the holidays or special occasions.
  • Sea Salt. Sprinkle sea salt on top of the cookies. The sweet and salty combination is the best.
  • Drizzle Chocolate. Enhance the chocolate flavor even more and drizzle chocolate on top. These cookies will be so decadent.
  • Crushed cookies. Feel free to add crushed cookies to the batter. We like crushed Oreo cookies,
  • Toffee or Caramel. Toss in bits of toffee or caramel into the batter. This bakes into each cookie for a luscious treat.

How to Make Cookies With Brownie Mix

  • Step 1. Preheat the oven. It needs to be set to 350 degrees F.

Step 2. Combine the brownie mix. In a large bowl, stir together the brownie mix, flour, eggs and vegetable oil with a wooden spoon. It is hard to use a hand mixer or stand mixer because the batter will be thick like brownie texture.

Step 3. Make the dough into balls. Use a cookie scoop to form the balls and then roll the cookie in the powdered sugar.

Step 4. Then put each cookie dough ball on the prepared cookie sheet. Bake for 10 to 12 minutes until the edges of the cookies are just set. Don’t overbake them.

Step 5. Finally, allow the cookies to sit on the baking sheet for 5 minutes to fully set. Then move to a wire cooling rack to cool completely. 

Serving Suggestions

The cookies are delicious served with a cup of cold milk.

Another fun idea is to serve these as ice cream sandwiches. Use two cookies and place a scoop of Vanilla Ice Cream in the middle. It will be a decadent ice cream sandwich without much work.

Storage

The cookies will last in an airtight container at room temperature for a few weeks. Separate with parchment paper to prevent them from sticking.

Can You Freeze Cookies?

Yes, you can freeze these cookies either baked or unbaked.

If you freeze them baked, allow to cool completely and place inside a freezer container. Separate the layers of cookies with wax paper.

You can also freeze the cookies unbaked. Roll into balls as normal but flash freeze instead of baking. Then freeze inside containers.

This method will prevent the cookies from sticking to each other. You can easily grab a couple to bake when the craving strikes. This makes it possible to enjoy fresh baked cookies any day of the week.

Expert Tips

  • Cookie Scoop – You can use a cookie scoop to make the cookies. This will shape them perfectly and make it so fast. While optional, it is so convenient and handy.
  • Allow to set – It is important to allow the cookies time to set before you move them. Moving the cookies to soon will result in crumbled cookies. We definitely want to avoid this.
  • Don’t crowd – Make sure to give the cookies ample room on the baking sheet. They will spread out and need room to do so while baking.
  • Don’t overbake – The cookies will continue to set once they are out of the oven. It is ok if they don’t look fully cooked because they will set as they cool. You don’t want to overcook them, or they will lose the fudgy center.
  • Chill the dough – If your cookies turn out too thin, try refrigerating the dough for 30 minutes before scooping into balls. This will help the dough set and prevent them from spreading too much.

    I just made these Brownie mix cookies. I used a dark chocolate brownie mix (because that is what I always get 😉)
    I divided my batter into 4 containers.
    1. I mixed in peanut butter chips
    2. Chopped walnuts
    3. WallMart brand mint fudge baking pieces
    4. Hershey’s dark chocolate chips
    When they came out of the oven … I put chocolate kisses on some (pushed them down just slightly); and on some others I pushed a dark chocolate sea salt Rolo into the middle. I also left some without a kiss or Rolo.
    In total I ended up with 48 cookies.
