However, bakery prices can be expensive, so I set out to make some at home. The results? These easy Italian cookies turned out fantastic. It’s such an easy cookie recipe. I also love to make Italian Easter Cookies Recipe and Cannoli Cake in the spring.

Why We Love This Recipe

Each bite is buttery and decadent. The entire recipe is so tasty, and they melt in your mouth. We absolutely loved these cookies, and you are going to as well.

The glaze makes these cookies even better and your family will be asking for more. These cookies are easy enough to make for a treat during the week but special enough for holidays, bridal showers and more.
 

Ingredients

Cookies

  • Eggs. They need to be room temperature.
  • Butter. Always use real butter.
  • Sugar. This recipe calls from granulated sugar.
  • Almond extract or vanilla extract. You can use the one you prefer.
  • All Purpose Flour. Spoon the flour into the measuring cup and don’t scoop it. This will be more accurate.

Glaze

  • Powdered sugar. Sift to remove any lumps.
  • Cream or milk. Either is fine so you can what you have.
  • Colorful sprinkles. Choose any colors you love.

Variations

  • You can use different color sprinkles for various occasions year-round. Try red and green at Christmas to make Italian Christmas cookies, pastels for Spring or Easter. You can use pink or blue for baby showers or gender reveal parties. The ideas are endless and such a blast to make.
  • Try different flavoring. You can change things up a bit and make almond flavored cookies or use anise extract for anise flavoring in the cookie recipe.  These cookies are amazing however you decide to make them.
  • Nuts. If you like nuts, you can add 1 to 2 cups of chopped nuts to the dough. This is a delicious variation.

How to Make Italian Wedding Cookies

  • Step 1. First, preheat oven to 350 degrees.

Step 2. While the oven is warming up, mix together the beaten eggs, oil, sugar and baking powder and extract in a large mixing bowl using a mixer. Then add the flour and salt to the mixture.

Step 3. Roll the cookie dough by tablespoonfuls into balls and place on baking sheet. Then place in the fridge for at least an hour. If you are in a hurry, you can freeze them for 15 to 20 minutes to speed the process. Finally, bake the cookies for about 9 minutes and then allow to cool on wire rack.

Step 4. Make the glaze in a small ball. Just combine all of the ingredients until smooth. Next, dip the tops of the cookies in the glaze.

Step 5. Then top with the sprinkles.  This is my favorite part and really makes the cookies extra special.

Pro Tips

  • Cookie Scoops. I like using a cookie scoop to make the dough balls. It makes the process so quick, and all of the cookies look the same.
  • Line the baking sheet. The baking pans are easier to clean, and the cookies bake evenly lined. You can use parchment paper or silicone baking liners.
  • Adjust the glaze if needed. You can add more or less milk to get the perfect consistency.
  • Allow to chill. It is important to chill the dough balls before baking. You can place in the freezer if you are short on time.

Storage

Place the cookies inside an airtight container and leave at room temperature. They do not need to be refrigerated.

These cookies last about 3 days stored in an airtight container.

Can You Freeze Italian Wedding Cookies?

Yes, you can. I prefer to freeze them on a cookie sheet and then transfer them to a freezer container or bag. This will help prevent the cookies from sticking to each other.

They last about 3 months in the freezer. You can easily make these in advance for special occasions, holidays and more.

Make sure to thaw the cookies before decorating if you choose not to do this prior to freezing.

Instructions

  • Mix together eggs, oil, sugar, and extract in a mixing bowl. Stir in flour, baking powder, and salt.
  • Roll dough by tablespoonfuls into balls. Chill balls of dough for at least an hour, or freeze for 15-20 minutes. Place cold dough balls on cookie sheets lined with parchment paper.
  • Bake at 350ยฐ for about 9 minutes, or till tops are set. Bottoms will be lightly browned, but tops should still be white. Remove cookies to cooling racks and cool completely.
  • For glaze, combine all ingredients in a small bowl and whisk till smooth, adding enough warm cream to get a thin but creamy consistency.
  • Dip tops of the cookies in the glaze, then top with sprinkles.
