How to Make Funfetti Cake Mix Cookies

Step 1. While the oven is preheating, combine all of the ingredients in a mixing bowl. Do not add the sprinkles yet.

Step 2. Add the sprinkles and fold into the mixture. The cake batter will be thick, but this is normal.

Step 3. Scoop the cookie dough into balls. I like to use a cookie scoop.

Step 4. Put the cookies on the baking sheet about 2 inches between each cookie. They will spread so make sure to leave room between each one.

Step 5. You can add more sprinkles if desired.

Step 6. Bake until lightly golden brown around the edges. Allow to sit a few minutes before transferring to a cooling rack.

Store confetti cookies at room temperature inside an airtight container. You can add a piece of bread to keep their soft texture.

Can you freeze the cookies?

Yes, the cookies are easy to freeze. You can freeze the cookie dough before baking. Simply form the cookie dough balls as normal and flash freeze them on a cookie sheet. After 1 to 2 hours, transfer the cookies to a freezer container. Bake as normal but add a few extra minutes if frozen.

You can also freeze the cookies already baked. Allow to cool and place inside a freezer container.

  • 1 box Funfetti cake mix
  • 2 eggs
  • 1/3 cup oil

Instructions

  • Preheat the oven to 375 degrees.
  • Mix everything except the sprinkles. (Batter will be thick).
  • Place on cookie sheets leaving about 2 inches between cookies.
  • Bake for 8 to 10 minutes until cookies brown SLIGHTLY on the edges.  Top with the sprinkles.
  • Allow to cool completely and then serve.
