  • Light Corn Syrup. Gives the pie a rich and delicious texture.

  • Eggs. I used large eggs.
  • Vanilla Extract. Always use good quality pure vanilla extract.
  • Ground Cinnamon. You can adjust this to taste if you love cinnamon.
  • Butter. Melted

Cinnamon Pecan Caramel

  • Brown Sugar. The Best Brown Sugar Substitutes.
  • Heavy Cream. Don’t substitute this because the heavy cream makes it so rich.
  • Chopped Pecans. More pecans on top give this pie so much decadent flavor.

Step By Step Instructions

  • Step 1. Preheat the oven to 375 degrees Fahrenheit.

Step 2. Layer the pecan halves in the unbaked pie shell.

Step 3. In a large mixing bowl, whisk together corn syrup, brown sugar, eggs, vanilla extract, cinnamon and melted unsalted butter. Pour over the pecans.

Step 4. Bake the pie. Then remove from the oven and cool completely.

Step 5. Make the caramel topping. Add all the ingredients to a medium saucepan.  Heat over medium heat and whisk together until the sugar is dissolved.

  • Step 6. Top with caramel. Drizzle the caramel sauce over the cooled pie.  It will soak into the pie and taste so delicious.
  • Step 7. Slice and enjoy the pie. Then it’s ready to serve and enjoy!

Storage

Cover the pie with plastic wrap and refrigerate up to 4 days. You can also freeze the pie up to 2-3 months. Let the pie cool completely and wrap in plastic wrap or aluminum foil.

Place inside a freezer bag. Freeze the pie up to 2 to 3 months.

When ready to serve, thaw overnight in the fridge. Slice and serve as normal. This is a great method if you need this pie for holidays or potlucks.
