- Butterscotch Chips. Use a good quality brand.
- Butter. Melted
- Eggs. Lightly beaten
- Light corn syrup. This helps to make the filling rich and delicious.
- Vanilla extract. Use pure vanilla extract.
- Pecans. Use pecan halves.
- Pie crust. Unbaked crust.

- Pie Dough – We used an already prepared crust, but you can make a Homemade Pie Crust.

How to Make Butterscotch Pecan Pie

Step 1 – Preheat the oven to 350 degrees Fahrenheit. Place the butterscotch chips and butter in a large microwave safe bowl or double boiler. Melt in 30 second intervals, stirring after each interval, until melted and combined.

Step 2 – Let the butterscotch mixture cool slightly. Then whisk in the corn syrup, eggs and vanilla extract until well combined. Bake for about 50-60 minutes until the top is slightly browned. The center will not be all the way set.

Step 3 – Stir in pecans.

Step 4 – Pour the pecan pie filling into the pie shell. We used a 9-inch pie crust. Cool completely on a wire rack.
Pro Tips
- Cover the pie. If the pie starts to get too brown, cover the edges to prevent it from burning while the pie continues to cook.
- Make in advance. You can easily make this pie ahead of time. It is great served cold.
- Pie Crust. You can use homemade or store-bought pie crust in this easy recipe.
- Melt the butterscotch chips carefully. Melt in intervals so it does not burn.
Serving Suggestions
- Whipped Cream. Dollop each slice with whipped cream. You can use store bought or homemade whipped cream.
- Vanilla Ice Cream. Each slice is so tasty with a scoop of ice cream. We love No Churn Vanilla Ice Cream but you can use any flavor you like.
- Butterscotch drizzle or sauce. If you are feeling decadent, add an extra drizzle on top.
- Butterscotch chips. Sprinkle a few on top for more butterscotch flavor.
- Nuts. Crushed pecans added on top of the pie is so yummy. We like to dollop whipped cream and then sprinkle chopped nuts on top of that.

Storage
Cover the pie with pie plastic wrap or foil. Refrigerate up to 4 days in an airtight container. You can serve cold, but I prefer it room temperature. Either option is great.
You can also freeze this pie up to 2 months. Cover the pie tightly in plastic wrap and foil. Then place inside a freezer bag.
When ready to serve, allow to thaw in the fridge overnight. Freezing the pie is the perfect option for holidays when you want to do some baking ahead of time.
Make sure the pie is completely cool before storing using either option.
