What are Rice Krispies Cookies?
It is a delicious blend of traditional chocolate chip cookies with the addition of rice krispies cereal and rolled oats. The unique texture of rice krispies cereal blended with the cookie dough creates an amazing cookie.

Ingredients:

- Butter
- Brown Sugar
- Sugar
- Rolled Oats
- Rice Krispie Cereal
- Semi-Sweet Chocolate Chips

Variations to try
- Coconut. Shredded coconut is delicious in this recipe.
- White Chocolate Chips. Substitute white chocolate chips in this recipe or combine milk chocolate and white chocolate.
- Peanut Butter. Mix in peanut butter chips with the chocolate.
Step by step instructions

Step 1. While the oven is preheating, combine the softened butter, both types of sugar, eggs and vanilla. I used a stand mixer or you can use a handheld mixer.

Step 2. Use a separate bowl and whisk together the flour, baking soda, salt and baking powder.

Step 3. Combine on low speed the dry ingredients into the wet ingredients. Don’t overmix and beat together until just combined.

Step 4. Add the rolled oats, Rice Krispie Cereal and chocolate chips into the cookie dough.

Step 5. Form the cookies with a cookie scoop. Then place the dough on a baking sheet. Don’t crowd the cookies and place them about 2 inches apart.

Step 6. Bake for 10-13 minutes until the edges are golden brown. Don’t overbake them as the cookies will continue to cook as they sit. Let them rest on the baking sheet for 5 minutes.

Step 7. Then move the cookies to wire cooling racks to cool completely.

Step 8. Place on a platter and serve.
Storage
Keep the cookies store in an airtight container at room temperature for up to 1 week. Put a piece of bread in the container with the cookies to keep the cookies moist.
Pro Tips
- Don’t overbake the cookies. They will continue to bake as they sit and you don’t want to burn them. They should be light brown.
- Line the baking sheet with parchment paper. This helps cleanup to be easier and prevents the cookies from spreading too much.
- Don’t overmix the cookie dough. Combine only until mixed together. If you overmix the dough, the cookies will be tough.
Frequently asked questions
Normally, cookie dough can be frozen. However, this recipe can’t due to the rice krispies cereal. It will absorb too much liquid and the texture will change.

Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a large mixing bowl, cream together the softened butter, sugar, brown sugar, eggs and vanilla extract with a stand up mixer or hand held mixer.
- In a separate bowl, whisk together the flour, salt, baking soda and baking powder.
- On low speed, add the dry ingredients into the wet ingredients and beat together until just combined. Be careful not to over mix.
- Mix in the rolled oats, Rice Krispie Cereal and chocolate chips into the cookie dough.
- Use a cookie scoop to place the dough on a baking sheet approximately 2 inches apart.
