Step By Step Instructions

Step 1. While the oven is preheating, combine the softened butter, both types of sugar, eggs and vanilla. I used a stand mixer or you can use a handheld mixer.

Step 2. Use a separate bowl and whisk together the flour, baking soda, salt and baking powder.

Step 3. Combine on low speed the dry ingredients into the wet ingredients. Don’t overmix and beat together until just combined.

Step 4. Add the rolled oats, Rice Krispie Cereal and chocolate chips into the cookie dough.

Step 5. Form the cookies with a cookie scoop. Then place the dough on a baking sheet. Don’t crowd the cookies and place them about 2 inches apart.

Step 6. Bake for 10-13 minutes until the edges are golden brown. Don’t overbake them as the cookies will continue to cook as they sit. Let them rest on the baking sheet for 5 minutes.

Step 7. Then move the cookies to wire cooling racks to cool completely.

Step 8. Place on a platter and serve.
Storage
Room temperature: Store cookies in an airtight container at room temperature for up to 5 days. Place a piece of parchment paper between layers to keep them from sticking together.
Freezer: These cookies freeze well! Store in a freezer-safe bag or container for up to 3 months. Thaw at room temperature before serving.
Make ahead: You can also prepare the dough ahead of time and refrigerate it for up to 2 days before baking.
Pro Tips
- Don’t overbake – The cookies should be lightly golden around the edges when you remove them from the oven. They’ll continue to bake on the sheet as they cool, keeping them soft and chewy.
- Line your baking sheet – Use parchment paper or a silicone baking mat to prevent spreading and make cleanup quick and easy.
- Mix gently – Combine the dough just until the ingredients are incorporated. Overmixing can make the cookies dense or tough.
- Use softened butter – Make sure the butter is at room temperature so it blends smoothly with the sugars for a perfect texture.
- Let cookies cool completely – Allow the cookies to rest on the baking sheet for a few minutes before transferring to a rack. This helps them firm up without breaking apart.
- Add mix-ins last – Gently fold in Rice Krispies and chocolate chips at the end to keep the cereal crunchy.
