Ingredients

  • Strawberry Cake Mix. You can use any brand you prefer.
  • Large Eggs. Use room temperature eggs.
  • Vanilla Extract. Pure vanilla extract is best.
  • White Chocolate Chips. Use a good quality chocolate.
  • Rainbow Sprinkles. This is optional but looks so pretty on top.

Variations

  • Freeze dried strawberries. You can add these to the cake mixture for more intense strawberry flavor.
  • Dark Chocolate Chips. Instead of using white chocolate chips, use dark chocolate chips in this recipe. They look great and taste delicious.
  • Fresh Strawberries. Puree fresh strawberries and add to frosting for the cake.
  • Strawberry Jam. Add this to cream cheese and powdered sugar for a great topping.
  • Cream Cheese Frosting. Use either store bought or homemade cream cheese frosting. For even more strawberry flavor, add fresh pureed strawberries to the frosting.
  • Powdered Sugar. Dust the brownies with powdered sugar before serving.
  • Sprinkles. We used rainbow sprinkles but you can use any type you prefer.

How to Make Strawberry Brownies With Cake Mix

  • Step 1. Preheat the oven to 350 degrees F.  Spray a9X13 baking pan with non-stick cooking spray.

Step 2. Use a large mixing bowl and combine the box strawberry cake mix, eggs, vegetable oil and vanilla extract.

Step 3. Stir together by hand.  The strawberry brownie batter will be thick, but this is normal.

Step 4. Carefully, stir in half of the white chocolate chips and sprinkles. 

Spread the batter in the pan.

Step 5. Then spread the batter into the baking pan.

Step 6. Finally, top with the remaining chocolate chips and sprinkles. Next, bake for 15 minutes until the edges of the brownies are set.  A toothpick inserted into the center should come out clean or with moist crumbs.

Step 7. Allow the brownies to cool completely on a wire rack and then slice.

Storage

Store the leftovers in an airtight container at room temperature for up to 4-5 days. Place parchment paper in between the squares to prevent them from sticking.

If you add the optional frosting, the brownies are best stored in a single layer. Just keep that in mind so they still look great after being stored. Also, if you add frosting, the brownies will need to be stored in the fridge.

You can freeze this dessert if you need to make them last longer. Just make sure to use a freezer container.

Put the brownies in the container and separate with parchment paper. They can be frozen up to 2 months. Thaw on the counter when ready to enjoy.

Expert Tips

  • Square Baking pan. Instead of a 9×13 pan, you can use an 8×8 square baking dish. The brownies will just be thicker.
  • Line the pan. It is optional but you can line the baking dish with foil or parchment paper. This will make it easy to lift out and cut while making cleanup easy too.
  • Don’t overcook the brownies. Overcooking the brownies will make them taste more cake like. You want the texture to be dense like a brownie.
  • Be careful with fresh strawberries. We recommend dried strawberries in the batter instead of fresh strawberries. The moisture content in the berries will change the consistency and texture of the brownies. Instead, save the fresh strawberries for frosting.
  • Don’t substitute the oil. The oil helps to give these a dense and moist texture. Substituting the oil with melted butter will result in more of a cake like texture. We also do not recommend using applesauce for the oil as it will change the texture unless you want a cake like consistency.

Can You Make Brownies Using a Cake Mix?

Yes, you definitely can. Skip the instructions on the box mix and follow the ones in the recipe. By modifying the ingredients as directed, the consistency will not be like a cake but instead the dense brownie texture.

As you can see, there isn’t any water in this recipe. The high fat content of the oil will give the cake mix the perfect brownie like outcome. It really is amazing and so delicious.

The recipe also calls for less eggs than normally required in cake mix. This is to make sure the brownies do not rise too much. With these few minor adjustments, cake mix is transformed into the best brownies with tons of strawberry flavor.
