Variation ideas
- Regular frosting. Substitute vanilla frosting or cream cheese frosting on top and in between instead of cream cheese filling.
- Whipped Cream. Try using whipped cream instead of the cheesecake mixture. Keep in mind this option will not hold us as well as other fillings. When using this method, they should be eaten right away.
- Eyes. You can use candy eyes instead of mini chocolate chips. Another idea is to use a dollop of decorator icing to make the eyes.
- Seasonal. This can easily be enjoyed year round by eliminating the Santa details. It is a yummy treat any time of the year.
- Dairy free. If you need a dairy free option, use dairy free cream cheese to make the cheesecake filling.
How to make Strawberry Santas with cream cheese filling
Step 1. Prepare the strawberries and make sure they are clean. Cut the stems off.
Step 2. Next, cut a small portion off the top of each of the strawberries for the Santa hats. Dry the berries so the filling does not slide off later.
Step 3. Combine the filling using a large mixing bowl. Beat together the cream cheese, powdered sugar and vanilla extract.
Step 4. Place the cream cheese mixture into a piping bag with a tip. Pipe the mixture on top of the flat berry tops. You want to create a large upward swirl with the cream cheese mixture.
Step 5. Carefully top each strawberry with the reserved strawberry tops.
Step 6. Garnish each Santa. I used the smallest piping nozzle to pipe some of the cream cheese mixture on top of the strawberry hats and on front for the button. Finally, use tweezer to add the mini chocolate chips to make the face.
FAQ’s
These are best served the day that they are made. You can store any leftovers in the refrigerator for up to 2-3 days.
Make sure to keep them in the fridge until ready to serve. Otherwise, they will lose their shape.
I do not recommend freezing as the strawberries. They will get watery when thawing and drip onto the frosting.
Tips for Santa Strawberries:
- Room temperature cream cheese. The filling will be easier to cream and result in a smoother texture if room temperature. It will also be easier to pipe.
- Piping bag. If you do not have one, use a ziplock bag. Simply add the filing to the bag and cut the tip off the corner. Pipe as normal.
- Fresh Strawberries. It is a must to use fresh berries in this recipe. Frozen can’t be used as it will be mushy and not hold its shape.
- Serve immediately. This dessert can’t be made in advance. They will turn into a mess and not look pretty. Plan to make and serve these right away.
