Why Make this Festive Treat:
This is an adorable dessert that also tastes delicious. The combination of brownies with fresh strawberries and cream is tasty. Plus, they look so festive for your next holiday party.
Ingredients:
- Brownie Mix. Plus, the ingredients to prepare the brownies based on the package.
- Fresh Strawberries. With the tops removed.
- Unsalted Butter, softened
- Powdered Sugar
- Milk
- Vanilla Extract. Pure Vanilla Extract is best.

Recipe Variations:
- Reddi Whip. Substitute this instead of icing. It will save a little time and the whipped cream will still be delicious. Just keep in mind it will not hold as firmly as icing.
- Sprinkles. Top each brownie bite with festive sprinkles. The kids can help with this.
- White Chocolate. Dip the top of the brownie in melted white chocolate. Then dip in sprinkles. Put the strawberry on top before it sets.
- Brownie Mix. We used a store bought mix but you can make homemade brownies if you prefer.
- Frosting. In a hurry? Use store bought frosting in this recipe. Vanilla or cream cheese icing would be great.
- Gluten free. You can substitute a gluten free brownie mix in this recipe.
- Baking pan. If you do not have a mini muffin pan, bake the brownies using a rectangular pan. Allow to cool and use a small round cookie cutter to cut circles. Then decorate as normal.
How to Make Santa Hat Brownies:

Step 1 – Make the brownies. Prepare the brownie bites based on the package instructions. Pour the batter into mini muffin pans. Allow the brownie bites to cool completely at room temperature.

Step 2. While the brownies are cooling on a cooling rack, prepare the frosting. Beat the butter in a large mixing bowl until creamy. Then add the powdered sugar, milk and vanilla.

Step 3. Get out a piping bag. Place the frosting in a piping bag or you can use a ziplock bag.

Step 4. Top the brownies with frosting. Swirl the frosting on top of each of the brownie bites.

Step 5. Then top it with a strawberry with a cut side down. Then place a dollop of frosting on the top of the strawberry.

Step 6. Serve and enjoy these festive treats. Make sure to refrigerate until ready to serve.
Expert Tips:
- Prepare fresh. These are best made and served the same day. You can make the brownie bites in advance to help save time and then assemble them when ready to enjoy.
- Allow to cool. The brownies with Santa Hats need to be completely cool before decorating or the icing will melt.
- Strawberries. Use firm strawberries that are not overly ripe for this recipe. They need to hold their shape and not be overly juicy. Pat the strawberries dry with paper towels before using.
- Ziploc Bag. If you do not have a piping bag, you can us a Ziploc bag. Fill with the icing mixture and cut a hold in the corner. Pipe as normal.

How to Store:
These are best served fresh as the juice from the strawberries will start to break down the frosting and brownie. You can store leftovers in the refrigerator for 1-2 days.
How Long Will They Last:
They will last a day or 2 in the refrigerator. However, they may start to lose their shape.
