  • 4 Ingredients – You only need 4 ingredients to make these cookies. You don’t even need a stand mixer or hand mixer and can use a rubber spatula.
  • Budget Friendly – I like to grab cake mixes when they are on sale. This way you can use it to make cakes, cookies, or cupcakes last minute.

  • Strawberry Boxed Cake Mix. Any brand is fine.
  • Large Eggs. Room temperature eggs.
  • Oil. Vegetable oil or canola oil. You can also use melted butter.
  • White Chocolate Chips. I like Ghirardelli but any good quality chocolate will work.

Recipe Variations

  • Change the Chocolate Chips – Use milk chocolate chips instead of white chocolate.
  • Change the Cake Mix – Substitute chocolate cake mix, or a yellow cake mix for the strawberry cake mix. You can also use white cake mix and dye it with red food coloring.
  • Add Sprinkles – Add sprinkles to the cookies to make them even more festive. Red sugar sprinkles are so pretty! I would add ½ cup of sprinkles to the batter before baking.
  • Ice the Cookies โ€“ You can top the cookies with icing for added flavor.
  • Cookie Sandwiches โ€“ Make a cookie sandwich with frosting in the middle.
  • Powdered Sugar โ€“  Dust the tops of the Valentine’s Day Cookies with powdered sugar.
  • Vanilla Extract. Add a teaspoon of vanilla extract to the batter.
  • Dip the cookies. Melt chocolate and dip half the cookie in white chocolate or milk chocolate.

How to Make Valentines Day Cake Mix Cookies

  • Step 1 – First, preheat oven to 350 degrees F.

Step 2. Combine the cake mix, eggs and oil together in a large mixing bowl. The batter will be thick, but this is normal. You can use an electric mixer, but I prefer to just mix by hand.

Step 3. Next, add in the white chocolate chips. Fold into the batter with a wooden spoon.

Step 4. I like to use a cookie scoop to scoop out the cookies or you can use a tablespoon. Then place the dough balls on a lined cookie sheet. Bake for about 8 minutes or until slightly brown on the edges. The candy will bake into the top of the cookies perfectly.

Step 5. Allow the batch of pink cookies to cool completely on a wire rack and then serve.
