- Cooling Rack: Always transfer baked cookies to a cooling rack to cool completely and maintain their texture.
- Prepare Your Baking Sheet: Line cookie sheets with parchment paper or silicone mats for easy cleanup and to prevent sticking.
- Don’t Overmix: Mix the batter just until combined to keep the cookies light and fluffy instead of dense.
- Room Temperature Ingredients: Make sure eggs are at room temperature to help the dough come together smoothly.
- Space Cookies Properly: Leave at least 2 inches between cookies on the baking sheet to allow for spreading.
- Watch Baking Time: Keep an eye on the cookies. They should be lightly golden around the edges but still soft in the center.

I used a 15.25 oz strawberry cake mix to make these strawberry cookies and it worked great. This is the most common cake mix that is available.
They do make 18 oz cake mixes and I have found that they also work great to make these cake mix cookies. Cookies made with an 18 oz cake mix have more of a cake like texture but still taste great.

The cake looks perfect and fabulous to bake for a special day. Yes, it’s definitely the best strawberry cake. Lovely!!
Thank you!
I am NOT an avid baker by far. But your easy to follow recipe tricked my co-workers into thinking I’m a great baker…I just didn’t correct them. Nor did I let them in on the easy secret of using boxed cake mix. But these cookies were gone quickly, and many inquired about the recipe. I just told them it is “an old family recipe” that I didn’t even measure ingredients because I’ve made them so many times (ok, little white lie). You made me look talented and experienced! Thanks!
Thanks so much for sharing Brittney! I’m so glad your co-workers and you used them!
So good and so easy!!! 4 yr old toddler approved! I even put some sliced almonds on the parents batch 😋 I wish I could upload a pic! But nonetheless thankful for you and your recipe♥️
So glad you loved it!
Hi! I have an egg allergy- are there any substitutes I can use?
