It’s an easy recipe using a premade crust and fresh fruit. It bakes together into a luscious pie packed with apple slices and fresh berries. It isn’t overly sweet and has the perfect amount of tartness.

Variations

  • Homemade Pie Dough. If you prefer to use a homemade pie crust, feel free to substitute this for the store-bought crust. You can use your favorite recipe or try this easy 3 Ingredient Pie Crust Recipe.
  • Crumble Topping. The lattice is very simple to make so don’t let it intimidate you. However, if you prefer a crumble topping, feel free to swap your favorite recipe for the lattice.
  • Apples. Feel free to use the type of apples you love the most. We prefer Granny Smith Apples because they are tart and cut down on the sweetness. Other ideas include Gala, Roma, Pink Lady and more.
  • Fresh or Frozen Fruit. You can use either type of fruit in this pie recipe. If fresh blueberries are not in season and you have some in the freezer, feel free to use those.

How to make Blueberry Apple Pie

  • Step 1. Preheat the oven and refrigerate the pie crust. Preheat the oven to 400 degrees Fahrenheit and chill the pie crust while you prepare the filling.

Step 2. Combine the fruit and other ingredients in a large bowl. Make sure everything is thoroughly combined.

Step 3. Put one pie crust in the 9-inch pie dish. Add the fruit filling. Then lay out the other pie crust on a floured work surface. Cut into strips to make the lattice top. Then carefully thread the strips over and under to make a weave topping on top of the pie plate.

Step 4. Seal the edges of the crust with a fork or with your fingers. Top with the egg wash using a brush Cover the crust with foil or a pie crust shield.

Pie baked and ready to enjoy.

Step 5. Place the pie on a baking sheet and bake the pie at 400 degrees for 30 minutes. Remove the foil or pie shield and reduce the oven temperature for the remaining 20 minutes. Allow to cool.

How to tell when the pie is finished baking?

The top crust should be golden brown. The filling will also bubble when it is fully cooked. You should be able to see between the lattice if it is bubbling.

How to serve?

When serving, top with a scoop of vanilla ice cream or whipped cream if desired.

How to store?

Cover the pie in plastic wrap. Refrigerate any leftover pie covered for up to 3-4 days. 

Make sure the pie is completely cool before storing. It needs to set for at least 3 to 4 hours before cutting into slices. This will ensure the pie holds its shape.

How to freeze?

This baked pie can be frozen up to 1 month. Allow it to cool completely and then cover in plastic wrap. Then cover again in foil.

You can also place the pie in freezer bag as well but it’s not necessary. When ready to serve the pie, allow to thaw in the fridge overnight. It is best served at room temperature. You can also warm the pie slightly if you enjoy it warm.

Tips for Success

  • It’s okay to overfill the pie crust. The apples will cook down while baking so don’t be alarmed if the pie crust seems overly full. Don’t be tempted to remove some or you will be left with a gap in between the crust once it bakes down.
  • Don’t skip the egg wash. This gives the pie the wonderful golden color as it bakes.
  • Cover the crust if it’s getting too brown. Check on the pie during the baking process. If the pie is getting overly brown, cover it with foil or a pie shield. This will prevent it from getting too brown while the pie finishes baking.
  • Cut the apples into even slices. Try to slice the apples all the same size. This will help them to cook evenly. It also will make the pie easier to eat if you are not getting huge chunks of apples.

Ingredients

  • 2 Premade Pie Crusts refrigerated
  • 2 pounds Apples peeled, cored and sliced into thin slices
  • 2 cups Blueberries fresh or frozen
  • 1 Tbsp Lemon Juice
  • 1/2 cup Sugar
  • 3 Tablespoons Cornstarch
  • 1/4 tsp Salt
  • 2 teaspoons Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 1/2 Lemon zested

FOR THE TOPPING:

  • 1 Large Egg lightly beaten
  • 1 tsp Sugar

Instructions

  • Preheat the oven to 400 degrees Fahrenheit and chill the pie crust while you prepare the filling.
  • Place the apples, blueberries, sugar, lemon juice, sugar, cornstarch, salt, ground cinnamon, nutmeg and lemon zest in a large mixing bowl.  Stir to thoroughly combine the ingredients.
  • Place one of the chilled pie crusts in a 9 inch pie pan.
  • Then fill the pie crust with the apple and blueberry mixture.
  • Then lay out the other pie crust on a floured work surface. Use a pizza cutter, sharp knife or pastry wheel to cut the pie crust into 16 strips that are approximately ½ inch thick. Then carefully thread the strips over and under one another to make a weave topping on top of the pie. Trim off any excess overhang on the pie.
  • Then crimp the edges of the dough with a fork or with your fingers.
  • Gently brush the top of the lattice topping with the lightly beaten egg and sprinkle the sugar on top. Cover the crust with foil or a pie crust shield.
  • Bake the pie at 400 degrees  Fahrenheit for 30 minutes. Remove the foil or pie shield and reduce the oven temperature to 375 degrees F. Then bake the pie for 30 more minutes until the crust is golden brown and the filling is bubbling (a small knife inserted into the middle of the pie comes out clean).
  • Allow the pie to cool on a wire rack at room temperature for at least 4 hours.
  • Then the pie is ready to slice, serve and enjoy!

Recipe Notes

Refrigerate any leftover pie covered for up to 3-4 days. 
I love serving this pie fresh but you can easily make this pie the night before serving as well.
