Ingredients

Ingredients for Chocolate Ice Box Cake - chocolate graham crackers, cream cheese, powdered sugar, cool whip, heavy cream, chocolate chips.

Ice Box Cake

  • Chocolate Graham Crackers. These make the best layers.
  • Cream Cheese. This needs to soften at room temperature.
  • Powdered Sugar. Sift the powdered sugar for the smoothest and creamiest texture.
  • Cool Whip. You can use store bought or you can make homemade whipped cream.

Ganache Topping

  • Heavy Whipping Cream. This blends into a rich and creamy topping.
  • Chocolate Chips. Try to use the best quality chocolate you can find to make the chocolate ganache.

Optional Topping

  • Mini Chocolate Chips. You can use regular size if that is what you have on hand but the mini is what we prefer.

How to Make Chocolate Icebox Cake

Step 1. Use a large mixing bowl to combine the cream cheese, powdered sugar and cocoa powder. It needs to be smooth and fluffy.

Step 2. Second, gently fold in the cool whip.

Step 3. You will need an 8×8 pan. Then layer the chocolate graham crackers in a single layer in the baking dish.

Step 4. Next, top with part of the cream cheese mixture. Spread it all over the top. Keep repeating this process 2 more times.

Step 5. Finally, make the ganache topping.  Put the ingredients for the topping in a microwave-safe bowl and heat in 30-second intervals. Make sure to stir between each interval so it does not burn. Keep repeating the intervals until fully melted.

Step 6. Once the ganache is ready, pour it all over the cake. Top with the mini chocolate chips if desired.

Storage

Cover in plastic wrap and store in the refrigerator up to 3 days.

Recipe Tips

  • Try to make this the day before. It is best if it can sit overnight in the fridge. The graham crackers need to be soft.
  • I like to use disposable pans for the cake if I’m taking it to a potluck or cook out.  It is nice being able to just toss the pan.
  • Topping: While optional, the mini chocolate chips look so pretty on top and taste amazing. You can also try white chocolate, peanut butter or dark chocolate for a change. Sounds yummy!
  • Add espresso powder to the cream cheese mixture for coffee flavor. I would start by adding 1 heaping spoonful and adjust according to how much coffee flavor you prefer.

How long does an icebox cake need to be refrigerated?

Overnight is preferred but 4 to 5 hours will work at a minimum. You just want the graham crackers to be softened. 

This is optional but I like to top with mini chocolate chips. You can’t go wrong with more chocolate. Enjoy!

  • Icebox Cake Ingredients:
  • 1 Package of Chocolate Graham Crackers 16 oz.
  • 12 oz Cream Cheese
  • 1/2 cup Powdered Sugar
  • 1/2 cup Cocoa Powder
  • 8 oz Cool Whip thawed
  • Ganache Topping Ingredients:
  • 1/2 cup Heavy Whipping Cream
  • 1 cup Chocolate Chips
  • Optional Topping:
  • Mini Chocolate Chips

Instructions

  • In a mixing bowl, beat together the cream cheese, powdered sugar and cocoa powder until the mixture is smooth and fluffy.
  • Then gently fold in the cool whip.
  • Then layer the chocolate graham crackers in a single layer in the bottom of an 8X8 or 9X9 pan.
  • Then top with ⅓ of the cream cheese mixture spreading it evenly over the top.
  • Repeat this process 2 more times.
  • Then make the ganache topping.  Place the topping ingredients in a microwave safe bowl and heat in 30 second intervals (stirring between each interval) until the chips are melted and well combined.
  • Pour the ganache topping evenly over the cake.
  • Refrigerate for 4-5 hours (overnight is preferred) until the graham crackers have softened.
  • Top with the mini chocolate chips if preferred.  Serve and enjoy!
