Ingredients

Streusel

  • All Purpose Flour. The recipe calls for just regular plain all-purpose flour. When you measure, spoon and don’t scoop into the measuring cup.
  • Butter. Softened at room temperature before using.
  • Brown sugar. Try Homemade Brown Sugar Recipe
  • Cinnamon. This enhances the flavor.

Cookies

  • Butter. Always use real butter.
  • Egg. I used a large egg.
  • Vanilla Extract. Pure vanilla extract is suggested.

Glaze

  • Powdered Sugar. Sift the powdered sugar so the glaze will be smooth.
  • Milk. You can use the type of milk you prefer but I like whole milk.
  • Vanilla Extract. Use clear vanilla extract so the glaze will be white.

Variations

  • Nuts. Chopped pecans or walnuts would be delicious in the crumb topping.
  • Powdered sugar. Instead of a glaze on top, sprinkle powdered sugar.
  • Pumpkin flavor. Add pumpkin spice into the cookie dough instead of cinnamon.

Step By Step Instructions

  • Step 1. Start by preheating the oven to 350 degrees. Line a baking sheet with parchment paper.

Step 2. Combine the streusel ingredients in a medium size bowl. Use a pastry cutter or a fork until it’s well combined.  Then refrigerate while you make the cookie dough.

Step 3. Use a hand mixer or stand mixer to combine the butter with the brown sugar and granulated sugar. Then add in the cinnamon, egg and vanilla extract until combined.

Step 4. Reduce the mixer to low and add the flour, cornstarch, baking powder, baking soda and salt until just combined.  Don’t overmix.

Step 5. Next, use a large cookie scoop to scoop the dough into 12 balls. Place the cookie dough balls on the baking sheet.

Step 6. Use a small spoon to make an indention into the center of each cookie ball.

Step 7. Top each cookie with about 1 tablespoon of the streusel into each of the indentions. Bake the cookies for 10-12 minutes until the edges are set.

Step 8. Let the cookies set for 10 minutes on the baking sheet. Then move them to a wire rack to cool completely.

Step 9. Finally, sprinkle any remaining streusel mixture on top of the cookies while they cool. Then top with the glaze.

How to Make Glaze

  • Step 1. Whisk the glaze ingredients together in a small bowl.  Adjust the milk based on the consistency of the glaze.  Add more milk if the glaze does not drizzle easily. 
  • Step 2. Drizzle the glaze over each of the cookies and then the cookies are ready to serve and enjoy! 

Storage

Store any leftover cookies in an airtight container at room temperature for up to 5 days. 

Pro Tips

  • Room temperature ingredients. Make sure that all of the ingredients are at room temperature before making the cookies. This will ensure that the ingredients combine together smoothly. 
  • Use large eggs. Smaller eggs will change the outcome of the cookies.
  • Line the baking sheet. Use a silicone baking mat or parchment paper to line the pan with.
  • Indentations in cookies. Make sure you make these large enough for plenty of room for the crumb topping.
  • Don’t skip the cornstarch. This helps to prevent the cookie from spreading too much.
  • Allow the cookies to cool. Wait to drizzle the glaze until the cookies have cooled.

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.  Set aside.

For the Streusel:

  • Mix together all the streusel ingredients in a medium size mixing bowl with a pastry cutter or a fork until combined.
  • Refrigerate while you prepare the cookie dough.

For the Cookies:

  • Mix together the butter with the brown sugar and sugar with a hand held mixer or stand up mixer until combined and smooth.
  • Add in the cinnamon, egg and vanilla extract until combined.
  • Then turn the mixer down to low and add in the flour, cornstarch, baking powder, baking soda and salt until just combined.  Be careful not to over mix the dough.
  • Use a large cookie scoop (approximately 3 tablespoons) to scoop the dough into 12 even rounded balls and place them on the baking sheet at least 2 inches apart.
  • Make an indention into the center of each cookie ball with your thumb or a small spoon.
  • Place approximately 1 tablespoon of the streusel into each of the cookie dough indentions.
  • Bake for 10-12 minutes until the edges are set and start to brown slightly.
  • Allow the cookies to set for 10 minutes on the baking sheet and then move them to a wire rack to cool completely. Sprinkle any remaining streusel mixture on top of the cookies while they cool before topping with the glaze.  

For the Glaze:

  • Whisk all the glaze ingredients together in a small bowl.  Check the consistency of the glaze.  Add more milk if the glaze does not drizzle easily.
  • Drizzle the glaze over each of the cookies and then the cookies are ready to serve and enjoy!
