Expert Tips

  • Flour – Make sure to measure flour out exactly. If you add to much flour to your cookie it can be dry and crumbly.
  • Mixing the Ingredients – When mixing the ingredients do no over mix. Just mi until ingredients are combined. Stir ingredients by hand or use a stand mixer or a blender to combine the ingredients.
  • Dough – When we prepared the cookie dough, we did not chill the dough before rolling it and placing on the baking sheet. But if you make ahead of time, place the cookie dough mixture in the refrigerator.
  • Baking – Once you have filled up a baking sheet, place the cookies in the oven. I like to do one cookie sheet at a time. This helps to have the cookies cook evenly.
  • Cooling Cookies – Allow the cookies to finish cooking on the cookie sheets before removing. After about 5 minutes you can move to a cooling rack.
  • Baking Pan – Line the baking sheet with parchment paper or use a silicone baking mat. Both of these will make clean up easier. Plus, it also helps the cookies to bake evenly.
  • Cookie Scoop – A cookie scoop will help to ensure each cookie is the same size. This will also help the cookies to bake evenly. It also makes it fast and easy to scoop the cookies. We used a medium size cookie scoop.
  • Don’t overbake the cookies. Keep in mind they will continue to bake on the baking sheet once out of the oven.
  • Chocolate Chips – Feel free to add in some chocolate chips or white chocolate to this recipe. This gives it so much flavor and texture.

Storage

Typically, items with a large amount of cream cheese will need to be refrigerated such as cheesecake. Baked good with a smaller amount of cream cheese do not have to placed in the fridge.

The cookies have a smaller amount of cream cheese and should be fine store in just an airtight container.

How to Freeze

Feel free to freeze these Cookies and Cream cookies two different ways. One way to freeze them is after you have baked them.

Allow the cookies to cool to room temperature and place them in a freezer safe bag. They will stay fresh up to 3 months if stored properly.

You can also freeze the dough with these easy steps.

  • Combine the Dough – Just combine the dough as normal. Form the cookie dough into balls. Place the balls on a cookie sheet.
  • Flash Freeze – Don’t bake the cookies but instead place in the freezer. Let the cookies flash freeze for 1 to 2 hours. Then place the cookie dough balls inside a freezer container. You can also wrap in plastic wrap.
  • Frozen Cookie Balls – Since you flash froze the cookies, they won’t stick to each other. This will be helpful later once you want to bake them.
  • Ready to Bake – When ready to enjoy, bake as normal. You may need to allow a few extra minutes baking time for the frozen cookies.
  • Cookie Dough Freezes Great – This cookie dough freezes really well and bakes just the same. We often bake half of the dough and freeze the rest.
  • Perfect for making ahead – It is nice to have some to enjoy now and more in the freezer. You can find more tips and tricks on freezing cookies and How to Freeze Cookie Dough.
