It is such a tasty way to enjoy chocolate chip cookies without all the unhealthy ingredients. They don’t take much time to make, and they turn out really great.

Each bite is packed with decadent chocolate chips. You get so much protein in each bite from the cottage cheese and protein powder.

Ingredients

  • Cottage Cheese. Whole fat cottage cheese has the best flavor in these cookies.
  • Large Egg. It needs to be room temperature.
  • Monk Fruit Sweetener. This works really well for baking.
  • Almond Flour. This grain free flour makes the cookies soft and delicious.
  • Vanilla Protein Powder. Adds more protein into the cookies and vanilla flavor. I used plant based organic protein powder.
  • Sugar Free Chocolate Chips. I like to use Lily’s because they are sweetened with Stevia, but you can use what you prefer. Dark chocolate chips taste great too.

Substitutions

  • Sugar. You can try using maple syrup or honey as a substitute.
  • Nuts. Swap the chocolate chips with nuts such as walnuts, pecans or almonds.

Step By Step Instructions

  • Step 1. First, preheat the oven to 350 degrees. Then line a baking sheet with parchment paper.

Step 2. Use a blender or food processor to combine the cottage cheese and egg. Blend until completely smooth. Add the cottage cheese mixture into a mixing bowl.

Step 3. Then mix in the sweetener, almond flour and protein powder. Stir until combined.

Step 4. Carefully fold in the chocolate chips. This needs to be done by hand.

Step 5. Form the cookie dough into balls. I like to use a medium cookie scoop (2 tablespoons) to easily do this. Place on baking sheet and bake for 15-20 minutes until the edges are slightly golden brown.

Step 6. Let the cookies cool for 5 minutes. Then move to a wire rack to cool completely.

Storage

Store the cookies inside an airtight container up to 3 days. You can also store in the fridge up to 7 days. For longer storage, place inside a freezer container up to 3 months.

  • Good quality chocolate. With only a few ingredients, you will taste the difference in the type of chocolate you use. I used Lilly’s No Sugar Added Chocolate Chips.
  • Texture of dough. Depending on the type of protein powder you use, you may need to add almond milk to thin it out or more almond flour to thicken it. I used a plant based protein that soaks up more moisture as compared to a whey based protein.
  • Don’t overbake the cookies. They will continue to set and firm up as they cool.
