We love easy brownie recipes, but I wanted to make something a little healthier. I perfected these decadent Cottage Cheese Brownies, and they turned out amazing. No one in my family except me likes cottage cheese and everyone loved these brownies!

It’s a great way to satisfy your sweet craving with these high protein brownies. You won’t even taste the cottage cheese with the chocolate flavor. While I love Easy One Bowl Brownies, this new recipe is a great alternative and so delicious.

The taste and texture are so amazing. They look and taste like normal fudgy brownies. That alone helped convince my family to try them!

With less sugar and flour than traditional brownies, they have a really yummy fudgy texture. We will definitely keep this on the dessert rotation, and I bet you will too. You might also like to try Cottage Cheese Pudding.

Ingredients

Ingredients for Cottage Cheese Brownies - cottage cheese, chocolate chips, vanilla, egg, butter, cocoa powder, flour, baking soda, chocolate chips.
  • Cottage Cheese. Once this is blended, no one will notice the cottage cheese.
  • Melted Chocolate Chips. I like to use mini chocolate chips.
  • Vanilla Extract. Pure vanilla extract will give the brownies a richer taste.
  • Egg. One egg helps to give the brownies the perfect texture without being a cakey brownie.
  • Butter. Melted and slightly cooled.
  • Milk. I used whole milk, but you can substitute your favorite milk.
  • Cocoa Powder. Use unsweetened cocoa powder.
  • All Purpose Flour. Also, try using whole wheat flour.
  • Baking soda. If you don’t have this, try one of the Best Baking Soda Substitutes.
  • Chocolate Chips. The extra chocolate chips make this recipe absolutely perfect.

Variations

  • Nuts. Mix in chopped nuts or sprinkle on top. I love chopped walnuts or chopped pecans.
  • Sea Salt. Top with flaky sea salt.
  • Sprinkles. Add sprinkles on top before baking for a festive touch.
  • Sweetener. Instead of granulated sugar, you can use maple syrup, honey, monk fruit sweetener or coconut sugar, but the texture will be different.
  • Peanut Butter. Swirl peanut butter or nut butter on top of the batter before baking.
  • Chocolate Chips. Try using dark chocolate chips instead.
  • Protein Powder. For extra protein, add a scoop of chocolate protein powder.

Step By Step Instructions

  • Step 1. First, preheat the oven to 350 degrees. Then spray an 8×8 baking dish with nonstick cooking spray.

Step 2. Next, use a blender or food processor to blend the cottage cheese, vanilla extract, egg, milk, sugar, cocoa powder, melted butter and melted chocolate until smooth.

Step 3. Add the flour, baking soda and salt in a large mixing bowl. Then add the cottage cheese mixture into the dry ingredients. Don’t overmix or the texture will change.

Step 4. Spread the batter into the pan. Gently tap on the counter to make sure it is even.

Step 5. Top with the remaining chocolate chips on top of the batter. You can fold these into the batter or just sprinkle on top like we did.

Step 6. Allow the brownies to bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Storage

Store in an airtight container in the fridge up to 5 days. If you prefer warm brownies, microwave for 15 seconds.

You can freeze up to 3 months in a freezer container.

Pro Tips

  • Thinner Brownies. If you prefer a thinner brownie, you can use a 9×13 baking dish. You will need to adjust the baking time since the batter will be thinner in the pan.  
  • Reduce the sweetness. You can reduce the sweetness and only use ½ cup sugar.
  • Don’t overmix the batter. Stir until just combined or the texture will change.
  • Allow to cool before cutting. They will not hold their shape if you try to cut the brownies too soon.
  • Line the pan. You can also line the pan with parchment paper. It will be easier to lift out of the pan to cut.

You can use gluten free, whole wheat, almond flour or anything you prefer.

What type of cottage cheese is best?

I prefer the flavor of full fat whole milk cottage cheese. If you do not want to use full-fat cottage cheese, you can use reduced fat.
