What is Grinch Fluff?
Grinch Fluff is a holiday twist on a classic fluff salad: a creamy pudding base folded with whipped topping and mini marshmallows, then tinted Grinch green. Our version uses cream cheese and vanilla pudding for a thick, cheesecake-like texture.
You may also see “old fashioned” versions made with pistachio pudding and crushed pineapple, like Watergate salad. That version is naturally green and a little fruity, and you can make it using the swap in the variations below.
Ingredients

- Cream cheese – Use a full 8-ounce block, softened. Cold cream cheese will not blend smoothly and leaves little white lumps in the green fluff. Full-fat gives the creamiest, thickest texture.
- Instant vanilla pudding mix – It must be instant, not cook-and-serve. The small 3.4-ounce box is all you need.
- Cold milk – We use 1½ cups, which is less than the box calls for. That makes the pudding set extra thick so the fluff holds its shape and doesn’t get soupy.
- Powdered sugar – It dissolves right into the cream cheese. Granulated sugar can leave the fluff gritty.
- Cool Whip – Thaw it in the fridge, not the microwave, so it stays light and fluffy.
- Mini marshmallows – A fresh bag gives the softest bites. Minis mean you get marshmallow in every spoonful.
- Green gel food coloring – Gel gives a bright Grinch green with just a few drops. Liquid coloring takes much more and can thin the mixture.
- Toppings – Red heart sprinkles or maraschino cherries, plus extra whipped topping.
Equipment
- Two mixing bowls, a whisk, a hand mixer, and a rubber spatula. For serving, small clear cups or one big glass bowl show off the green color best.
Step By Step Instructions

Step 1: Make the pudding. Whisk the pudding mix and cold milk together for about 2 minutes, until it is thick and smooth. Let it sit for 5 minutes to finish setting.

Step 2: Beat the cream cheese. In a large bowl, beat the softened cream cheese and powdered sugar until completely smooth. Scrape the sides of the bowl. Any lumps you see now will still be there in the finished fluff.

Step 3: Combine. Beat the pudding into the cream cheese on low speed until smooth and creamy.

Step 4: Add the color. Add a few drops of green gel coloring and mix. Keep adding a drop at a time until you get the shade you want. The Cool Whip will lighten the color, so aim a shade darker than you want the finished fluff.

Step 5: Fold in the Cool Whip. Switch to a spatula and gently fold in the whipped topping until no white streaks remain. Don’t use the mixer here. Beating knocks the air out and makes the fluff runny.

Step 6: Add the marshmallows. Fold in the mini marshmallows until they are evenly coated.
Step 7: Chill. Cover and refrigerate for at least 1 hour so the fluff can firm up. Add whipped topping, sprinkles, and cherries right before serving.

Variations
- Pistachio pudding instead of vanilla gives a naturally green, slightly nutty fluff and you’ll need little or no food coloring.
- White chocolate pudding works the same way as vanilla.
- Neufchâtel or ⅓-less-fat cream cheese works, but the fluff will be a little softer.
- Homemade whipped cream can replace Cool Whip. It tastes great but does not hold as long, so serve it the same day.
Making It For a Party?
Here’s the easiest timeline:
- Up to 24 hours ahead: Make the green fluff base (Steps 1–5), cover it, and refrigerate.
- The morning of (or at least 1 hour before serving): Fold in the marshmallows. They stay soft and pillowy instead of melting into the fluff.
- Right before serving: Spoon into cups and add whipped topping, sprinkles, and cherries. Sprinkles bleed red and green color if they sit too long.

Troubleshooting
- My fluff is runny. The usual causes are using the full 2 cups of milk the pudding box calls for, using cook-and-serve pudding, or mixing the Cool Whip with the mixer instead of folding. Chill it a little longer and it will firm up some.
- There are little white lumps. The cream cheese was too cold. Next time let it sit out about 30 minutes, and beat it smooth before adding anything else.
- The color looks pale or minty. Add more gel coloring before the Cool Whip goes in. It mixes in more evenly at that stage.
- The sprinkles bled. Add them right before serving.
- The marshmallows disappeared. They soften the longer they sit in the fluff. Fold them in the day you serve it.
How to Serve It + Party Guide
One batch makes about 6 cups of fluff. That fills about fifteen 5-ounce party cups (a heaping ⅓ cup each) or ten 9-ounce cups (about ½ cup each), with room left for whipped topping.
Storage
Store leftovers covered in the fridge for up to 2–3 days. The marshmallows will get softer each day, but it still tastes great. We don’t recommend freezing Grinch Fluff because the pudding and marshmallows change texture as they thaw.
FAQ
Pistachio pudding instead of vanilla gives a light green, slightly nutty fluff. You’ll still want a few drops of gel coloring for a true Grinch green. For an old-fashioned, Watergate-style version, fold in one 20-ounce can of crushed pineapple, well drained, with the marshmallows.
Not quite. Watergate salad uses pistachio pudding, crushed pineapple, and nuts. This Grinch Fluff uses vanilla pudding and cream cheese for a thicker, creamier texture, but both are green, fluffy, and made with whipped topping and marshmallows.
Yes, but it will be lighter and softer, more like a pudding mousse. Use the full 2 cups of milk the pudding box calls for if you leave out the cream cheese.
Our Grinch Dip is thicker and made for scooping with cookies and pretzels. Grinch Fluff is light, spoonable, and full of marshmallows, so it’s best served in cups.
