Step 1 – Blend the butter with both of the sugars and vanilla extract. Blend until thoroughly combined.
Step 2 – Add in the eggs then add in the butterscotch pudding mix and blend.
Step 3 – Then stir in flour, baking soda and salt. Do not over mix.
Step 4 – Then fold in the butterscotch chips and white chocolate chips. Scoop on baking sheet and bake.

Harry Potter Butterbeer Cookies
Ingredients
- 1 cup Unsalted Butter softened
- ½ cup Brown Sugar
- ½ cup Granulated Sugar
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- 1 3- ounce package butterscotch instant pudding mix
- 2 1/4 cups All Purpose Flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup white chocolate baking chips
- 1 cup butterscotch chips
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Blend the butter with both of the sugars and vanilla extract with a hand held mixer or stand up mixer. Blend until thoroughly combined.
- Add in the eggs one at a time blending between each one to make sure that they are thoroughly combined. Add in the butterscotch pudding mix and blend until combined.
- Then stir in by hand the flour, baking soda and salt. Do not over mix.
- Then gently fold in the butterscotch chips and white chocolate chips.
- Drop the dough onto cookie sheets in approximately 1 tablespoon and ensure that they are approximately 2 inches apart.
- Bake for 10-12 minutes until the bottom of the cookie is lightly browned.
- Remove them from the oven, allow the cookies to cool on the cookie sheets for approximately 5 minutes and then transfer them to wire racks to cool completely. Enjoy!
