What Are Star Crunch Cookies?
This star crunch recipe is one of my favorite Little Debbie Cookies. It is soft and chewy and loaded with chocolate flavor. The combination of the caramel and rice cereal coated with the chocolate fudge, makes this a family favorite.
Making this Star Crunch Cookies only requires a few ingredients, and it saves me money by making them at home.
These star crunch cookies are similar to caramel and crispy rice krispie treats.
Ingredients

- Crispy Rice Cereal. Make sure the cereal is fresh and not stale.
- Butter. Real butter is always best.
- Chocolate Chips. You can use milk chocolate or semi-sweet chocolate chips.
- Mini Marshmallows. The miniature size is easier to melt.

Variations
- Sweetened Condensed Milk – If you prefer, you can add in a can of sweetened condensed milk while melting the chocolate.
- Cocoa Powder – Instead of using chocolate chips, you can melt butter and cocoa powder together.
- Cereal – We used rice krispie cereal in this recipe, but you use other rice cereal to make these cookies.
How to Make Star Crunch Cookies
- Step 1 – Prepare Baking Sheets – First, line two baking sheets with parchment paper and set aside for later.

Step 2. Next, put the butter, chocolate chips, caramel chips, and marshmallows in a microwave-safe bowl. Start by microwaving this mixture in 30-second intervals.

Step 3. Continue Melting. Stir between each interval until all the ingredients are melted and combined.

Step 4. Once the mixture has been melted, gradually add the Rice Krispies cereal to the melted chocolate.

Step 5. Finally, use a cookie scoop to form the cookies. Place on a lined baking sheet. Each cookie needs to be flattened slightly. Allow the cookies to set. This will take about 20 to 30 minutes.

- Spray Hands – Spray your hands with cooking spray so they won’t stick when you are pushing the cookies down.
- Cookie Scoop – Use a cookie scoop to scoop the cookies. It allows you to quickly do a bunch at once. Plus, they are all uniform when you use the scoop. It makes it really easy to get them all the same size.
- Baking Sheet– Start with a good baking sheet. Once they start to get dark brown on the bottom, it is probably time to get a new one.
- Line Baking Sheet – Make sure to line your cookie sheet with wax paper. This will make cleanup so much easier. I would also recommend spraying the wax paper with cooking spray. This helps easily remove the cookies from the baking sheet.
- Melting Ingredients – Melt the ingredients in the microwave of on the stovetop in a large pot. Make sure not to burn the chocolate. Start by melting in 30-second intervals until melted and smooth.
- Rest Cookies –Before serving the cookies, we recommend allowing them to rest for about 20 minutes. This helps to combine the ingredients and keeps them cookies from falling apart.

Store these cookies in an airtight container at room temperature. They will last about a week at room temperature, but if you place in the fridge they will last about 2 weeks.

- 6 cups Crispy Rice Cereal
- 4 Tbsp Butter
- 1 cup Chocolate Chips
- 1 cup Caramel Chips
- 10 oz package of Mini Marshmallows

Instructions
- Line two baking sheets with parchment paper and set aside.
- Melt the butter, chocolate chips, caramel chips and marshmallows in a microwave safe bowl by microwaving this mixture in 30 second intervals (stirring between each interval) until all the ingredients are melted and combined.
- Gradually add in the Rice Krispies cereal and mix until the cereal is completely covered.
- Use a large scoop or cookie scoop to drop the batter onto the lined baking sheet. Flatten the cookies out slight.
- Allow to rest at room temperature until set, about 20 – 30 minutes.
