Strawberry cheesecake recipe no bake is made with mousse-like texture that creates a delicious cheesecake filling. The cream cheese and heavy cream mixture is whipped with a stand mixer for a creamy and airy texture.

Ingredients

Ingredients for Strawberry Cheesecake - Graham Cracker Crumbs, butter, fresh strawberries, powdered sugar, cornstarch, cream cheese, vanilla extract, heavy whipping cream

For the Crust

  • Graham Cracker Crumbs. Crushed finely.
  • Butter. Melted.

For the Filling

  • Fresh Strawberries. Washed thoroughly.  
  • Powdered Sugar. Sift to remove the lumps.
  • Cornstarch. Helps to thicken the filling.
  • Cream Cheese. Softened at room temperature.
  • Vanilla Extract. Pure vanilla extract is best.
  • Heavy Whipping Cream. Make sure the whipping cream is cold.

Substitutions Ideas

  • Crust – We made a Homemade Graham Cracker Crust for this recipe. But feel free to buy one at the store. You can also crush with cookies such as Oreos or gingersnaps. Add in granulated sugar for added sweetness.
  • Lemon Juice – For a delicious hint of lemon, add in a teaspoon or two of lemon juice. Strawberry and lemon is a light refreshing combination.

Step by Step Instructions

Step 1 – Mix together the graham cracker crumbs and melted butter.  Press the mixture into a 9-inch springform pan.

Step 2 – Dice the strawberries and place them in a food processor.  Blend until pureed.  Then strain this mixture through fine mesh strainer to remove any seeds.

Step 3 – Place the pureed strawberries, powdered sugar and cornstarch to a small saucepan.  Whisk together and heat over medium heat.

Step 4 – Beat the cream cheese, powdered sugar and vanilla extract together. Add in the heavy whipping cream and beat.

Step 6 – Pour the filling into the chilled crust.  Refrigerate, then the cheesecake is ready to slice, serve and enjoy.

  • Cream Cheese – Make sure the cream cheese is softened to room temperature before mixing. This helps the texture to beat smoothly and creamy. If you are in a hurry, you can cut the cream cheese into smaller pieces to help it soften quicker.
  • Strawberries – We recommend using fresh strawberries in this recipe. If you use frozen strawberries may change the texture.
  • Store in Fridge – This cheesecake is best served cold. We recommend keeping in fridge until you are ready to serve.
  • Combining the Ingredients – Combine the cheesecake filling with a blender, stand mixer, or a electric mixer. These options helps to have a smooth texture.
  • Preparing Crust – If you do not have a food processor, you can crush the graham crackers with a rolling pin. Place the graham crackers in a zip lock bag to crush into fine crumbs.

Freezing no bake cheesecake is a great way to get ahead on your holiday desserts. This cheesecake recipe freezes great with these specific freezer steps.

  • After preparing the cheesecake and allowing it to firm in the refrigerator, wrap in plastic wrap.
  • Then wrap in aluminum foil and write the date on the foil.
  • If stored properly this cheesecake will last up to 3 months.

How to Thaw

When you are ready to serve your frozen no bake cheesecake you have two options to thaw the cheesecake.

  • Remove the cheesecake from the freezer and place in the refrigerator and allow it to thaw overnight. Make sure to keep the cheesecake covered with plastic wrap while thawing.
  • Another option is to place on the counter at room temperature and it will thaw in about 2 hours. It will depend on the size of the cheesecake on how long it takes to thaw. You will probably need to check it.

  • Pour the filling into the chilled crust.  Refrigerate for at least 4 hours (overnight is preferred) and then the cheesecake is ready to slice, serve and enjoy!

Make sure the cream cheese is softened before mixing or it will not mix smoothly and you will get big cream cheese lumps.
