I like making Philadelphia No Bake Cheesecake Recipe because it is no-bake recipe and doesn’t require a lot of ingredients.

This no-fuss Cheesecake filling comes together easily and then fills a graham cracker crust perfectly. Regular cheesecake can require a lot of steps and ingredients. I always worry about overbaking it and the middle cracking, but this recipe is so easy.

What is a No-Bake Cheesecake?

No-bake cheesecake requires no ingredients that you have to bake. There is no eggs or condensed milk required. Plus no need to bake when the filling is made of cream cheese and cool whip which makes the perfect amount of creaminess.

If you are not much of a baker, this is a great recipe to start with using simple ingredients for classic taste and texture. The cheesecake comes out beautifully and you really can’t mess it up.

Ingredients

  • Philadelphia Cream Cheese. I prefer Philadelphia brand, but you can use store brand if you prefer.
  • Powdered Sugar. Sift the powdered sugar before using if its lumpy.
  • Vanilla Extract. Pure vanilla extract is best.
  • Cool Whip. Store bought or Homemade Whipped Cream Recipe.
  • Prepared Graham Cracker Crust. Instead of store bought, you can make Graham Cracker Pie Crust Recipe using graham cracker crumbs.
  • Cherry Pie Filling. This is optional for topping. I love Homemade Cherry Pie Filling.

Variations

  • Whipped Cream – You can use cold heavy whipping cream instead of cool whip if you prefer. Make sure to beat it until it forms stiff peaks.
  • Change the Crust – You can do an Oreo Crust or you can even make your own Homemade Graham Cracker Crust. You can crush graham crackers in a food processor and mix with melted butter.
  • Add Some Flavor For some additional flavors, stir in lemon juice.

How to Make Philadelphia No Bake Cheesecake

Step 1. In a large mixing bowl, beat together the cream cheese, sour cream, powdered sugar and vanilla extract. I used a hand mixer to beat until smooth.

Step 2. Carefully fold in the Cool Whip.

Step 3. Pour the mixture into the 9-inch pie crust. Use a rubber spatula to spread it out evenly. Then chill for several hours or overnight.

Step 4. After chilling for several hours, top with your favorite cheesecake topping and enjoy.

Cheesecake Topping

There are many different options when it comes to topping your cheesecake. It is a matter of preference on whether you want sweet sauces, berries, or a crunchy topping.

  • Syrups – Drizzle the Cheesecake with Hot Fudge Sauce Recipe or Homemade Caramel Sauce Recipe.
  • Different Pie Fillings – There are many different pie fillings you can top your cheesecake with. Try blueberry, strawberry, raspberry or peach.

Pro Tips

  • Refrigerate – Keep refrigerated until ready to serve.
  • Room-temperature Cream Cheese – Make sure the cream cheese is softened before mixing or it will not mix smoothly and you will get big cream cheese lumps. If you are in a hurry, you can cut the cream cheese into smaller pieces to help it soften quicker.
  • Cool Cheesecake – Cheesecake is based served cold. Keep refrigerated until ready to serve.

FAQs

Can you freeze?

We do not recommend freezing no-bake cheesecake to set it. But you can freeze it after it has been refrigerated for the recommended time.

If you prefer to freeze the no-bake cheese and enjoy later, it will stay good for up to 3 months. Make sure to wrap cheesecake with plastic wrap and then again with aluminum foil.

Double wrapping the cheesecake prevents freezer burn and keeps your cheesecake fresh.

How to thaw?

When you are ready to thaw your cheesecake, we recommend thawing in the refrigerator overnight. Keep the plastic on the cheesecake so it doesn’t absorb any odors in the fridge.

You can also place cheesecake on the counter, and it will thaw in about 2 to 4 hours. It will depend on the size of the cheesecake, but you can always check it. Remove the foil while it is thawing.
